      Abstract
      Lettuce Red Coral sebagai bahan salad siap santap rawan tercemar mikroba karena dikonsumsi tanpa pemanasan. Penelitian ini bertujuan menentukan pengaruh konsentrasi klorin (0, 50, dan 100 ppm) dan lama perendaman (3, 5, dan 7 menit) terhadap Total Plate Count (TPC) dan mutu fisik, serta menetapkan kombinasi terbaik menggunakan Metode Perbandingan Eksponensial. Rancangan faktorial 3×3 dengan tiga ulangan dianalisis dengan uji Scheirer-Ray-Hare untuk TPC dan uji Friedman untuk mutu fisik. Konsentrasi klorin berpengaruh sangat nyata menurunkan TPC, sedangkan lama perendaman dan interaksinya tidak nyata. Konsentrasi 50 dan 100 ppm setara dan memenuhi standar di bawah 6.000 Log10 CFU/g, sementara perlakuan tanpa klorin mempertahankan mutu fisik terbaik. Kombinasi terbaik berdasarkan MPE adalah 100 ppm selama 7 menit, dengan 50 ppm selama 5 menit sebagai alternatif operasional yang setara secara keamanan mikrobiologis dan berisiko residu klorin lebih rendah.
       
      Lettuce red coral used as a ready-to-eat salad ingredient is prone to microbial contamination as it is consumed without any heating step. This study aimed to determine the effect of chlorine concentration (0, 50, and 100 ppm) and soaking time (3, 5, and 7 minutes) on Total Plate Count (TPC) and physical quality, and to establish the best combination using the Exponential Comparison Method. A 3×3 factorial design with three replications was analyzed using the Scheirer-Ray-Hare test for TPC and the Friedman test for physical quality. Chlorine concentration significantly reduced TPC, whereas soaking time and its interaction were not significant. Concentrations of 50 and 100 ppm were equivalent and met the standard below 6.000 Log10 CFU/g, while the treatment without chlorine best preserved physical quality. The best combination based on MPE was 100 ppm for 7 minutes, with 50 ppm for 5 minutes as an operationally equivalent alternative carrying lower chlorine residue risk.
