      Pengaruh Kondisi Penyimpanan Saus Tiram dalam Botol terhadap Pertumbuhan Mikroba

      Abstract
      Penelitian ini bertujuan untuk mengetahui pengaruh kondisi penyimpanan terhadap parameter mikrobiologis saus tiram botol, serta menentukan kondisi penyimpanan terbaik dalam lingkup rumah tangga. Penelitian ini menggunakan rancangan dengan beberapa faktor, yaitu: (1) lama penyimpanan (minggu ke-0 hingga minggu ke-4), (2) tempat penyimpanan (di dalam chiller, di dalam ruangan, dan di dekat kompor), (3) serta kondisi kemasan (tertutup dan terbuka). Hasil penelitian menunjukan adanya pengaruh pada kondisi penyimpanan terhadap angka lempeng total (ALT) dan pertumbuhan kapang. Kondisi penyimpanan hingga minggu ke 4 tidak berpengaruh terhadap nilai Enterobacteriaceae dan Salmonella. Kondisi penyimpanan terbaik adalah di dalam chiller dengan kondisi kemasan botol tertutup.
       
      This study aimed to determine the effect of storage conditions on the microbiological parameters of bottled oyster sauce and to determine the best storage condition for household use. The study employed a design with several factors, namely: (1) storage duration (week 0 to week 4), (2) storage location (inside a chiller, indoors, and near the stove), and (3) packaging condition (closed and open). The results showed that storage conditions affected the total plate count (TPC) and mold growth. Storage conditions for up to 4 weeks had no effect on Enterobacteriaceae and Salmonella counts. The best storage condition was in a chiller with the bottle kept tightly closed.
