dc.description.abstractPT XYZ merupakan industri pangan yang memproduksi makanan olahan beku salah satunya yaitu rolade sapi. Penelitian ini membahas pengendalian cacat rolade sapi di PT XYZ menggunakan pendekatan statistical quality control. Latar belakang penelitian adalah tingginya produk cacat pada proses produksi rolade yang berdampak pada penurunan kualitas, peningkatan biaya produksi, serta kerugian perusahaan. Penelitian ini bertujuan mengidentifikasi jenis cacat, menganalisis penyebab, menentukan tindakan perbaikan. Hasil awal menunjukkan total cacat 29.079 dari 714.000 pcs dengan cacat dominan yaitu gulungan tidak sempurna sebanyak 22.417 (77,09%). Faktor penyebab meliputi adonan terlalu cair, pekerja terburu-buru, kurangnya pelatihan pekerja baru, rendahnya kesadaran mutu, tidak adanya pelabelan identitas pekerja, serta standar kerja yang belum terdokumentasi secara optimal. Jumlah cacat menurun menjadi 1.794 dari 666.000 pcs produksi. Penurunan nilai rata-rata cacat per unit (\bar{u}), yaitu sebelum tindakan perbaikan sebesar 0,04073 dan setelah tindakan perbaikan sebesar 0,00562. Hasil bagan kendali U menunjukkan proses terkendali dan hasil uji Wilcoxon signed-Rank Test menunjukkan hasil menunjukkan perbedaan yang signifikan.
dc.description.abstractPT XYZ is a food industry that produces frozen processed foods, one of which is beef roulade. This study discusses the control of defective beef roulade at PT XYZ using the statictical quality control. The background of the study is the high number of defective products in the roulade production process which has an impact on quality decline, increased production costs, and company losses. This study aims to identify the type of defect, analyze the causes, determine corrective actions. Initial results showed a total of 29,079 out of 714,000 pieces with the dominant defect being imperfect rolls of 22,417 (77.09%). Causal factors dough that is too runny, rushed workers, lack of training for new workers, low quality awareness, lack of worker identity labeling, and work standards that have not been optimally documented. The number of defects decreased to 1,794 of 666,000 pieces of production. The decrease in average value of defects per unit (\bar{u}) before corrective action was 0,04073 and after corrective action was 0,00562 The results of the U control chart show that the process is under control and the results of Wilcoxon signed-Rank Test show that the results show a significant difference
