| dc.description.abstract | Jenis hidrokoloid memengaruhi kekentalan dan kestabilan jelly drink selama penyimpanan. Penelitian ini bertujuan menganalisis pengaruh jenis hidrokoloid dan lama penyimpanan terhadap viskositas dan sineresis, serta karakteristik organoleptik jelly drink. Penelitian menggunakan rancangan acak lengkap faktorial 3 × 4 dengan tiga ulangan, terdiri atas ?-karagenan, konjak glukomanan, dan pektin yang disimpan selama 0, 3, 5, dan 7 hari pada suhu refrigerator. Jenis hidrokoloid, lama penyimpanan, dan interaksi keduanya berpengaruh nyata terhadap viskositas dan sineresis (p<0,001). Viskositas seluruh perlakuan meningkat selama penyimpanan dan tertinggi pada ?-karagenan, sedangkan konjak glukomanan menghasilkan sineresis terendah. Lama penyimpanan memengaruhi pH, tetapi seluruh nilainya tetap di bawah 4,6. Total padatan terlarut tidak dipengaruhi perlakuan. ?-Karagenan memperoleh penerimaan organoleptik tertinggi. Hasil ini menunjukkan bahwa ?-karagenan unggul dalam menghasilkan kekentalan dan penerimaan, sedangkan konjak glukomanan lebih baik dalam mempertahankan air. | |
| dc.description.abstract | The type of hydrocolloid determines viscosity and the ability of a gel network to retain water, thereby affecting the stability and acceptability of jelly drinks during storage. This study analyzed the effects of hydrocolloid type and storage duration on viscosity, syneresis, and organoleptic characteristics. A 3 × 4 factorial completely randomized design with three replications was applied using ?-carrageenan, konjac glucomannan, and pectin stored for 0, 3, 5, and 7 days under refrigerated conditions. Hydrocolloid type, storage duration, and their interaction significantly affected viscosity and syneresis (p<0.001). Viscosity increased in all treatments during storage and was highest in ?-carrageenan, whereas konjac glucomannan exhibited the lowest syneresis. Storage duration affected pH, although all values remained below 4.6. Total soluble solids were unaffected by the treatments. ?-Carrageenan achieved the highest organoleptic acceptability. These findings indicate that ?-carrageenan is more effective in providing viscosity and acceptability, whereas konjac glucomannan has better water-retention ability. | |
