| dc.description.abstract | Pink Guava Juice Naturally Fresh merupakan minuman pasteurisasi dengan kandungan puree jambu biji merah 50% yang rentan mengalami penurunan mutu selama penyimpanan suhu ruang. Penelitian ini menduga umur simpan menggunakan metode realtime shelf life study. Sampel disimpan pada suhu 25–27°C selama 19 minggu dan diamati tiap minggu untuk °Brix, total asam tertitrasi (TAT), viskositas, warna tintometer, serta uji organoleptik (aroma dan rasa), menggunakan model kinetika ordo nol dan ordo satu. Aroma, TAT, °Brix, dan warna red menurun dan mengikuti ordo satu, sedangkan rasa, viskositas, dan warna yellow meningkat dan mengikuti ordo nol. Warna yellow menjadi parameter kritis dengan estimasi umur simpan terpendek, yaitu 117,11 hari (3 bulan 27 hari), yang ditetapkan sebagai umur simpan produk pada suhu ruang. Hasil ini dapat menjadi dasar pengendalian mutu selama penyimpanan/distribusi serta acuan awal penetapan umur simpan komersial. | |
| dc.description.abstract | Pink Guava Juice Naturally Fresh is a pasteurized beverage containing 50% red guava puree that is prone to quality decline during room-temperature storage. This study estimated shelf life using the realtime shelf life study method. Samples were stored at 25–27°C for 19 weeks and evaluated weekly for °Brix, total titratable acidity (TAT), viscosity, tintometer color, and sensory attributes (aroma and taste), using zero-order and first-order kinetic models. Aroma, TAT, °Brix, and Red color decreased and followed first-order kinetics, while taste, viscosity, and Yellow color increased and followed zero-order kinetics. Yellow color was the critical parameter, giving the shortest estimated shelf life of 117.11 days (3 months 27 days), which was set as the product's shelf life at room temperature. These findings can support quality control during storage/distribution and serve as an initial reference for commercial shelf-life setting. | |
