| dc.description.abstract | Produk freeze dried mangga bersifat higroskopis dan berpori sehingga rentan menyerap uap air dan menurun mutunya selama penyimpanan. Penelitian ini bertujuan menentukan jenis kemasan yang paling baik dalam mempertahankan mutu freeze dried mangga. Rancangan yang digunakan adalah Rancangan Acak Lengkap Faktorial dengan faktor jenis kemasan (aluminium foil dan metalized film) dan lama penyimpanan, parameter yang diamati meliputi kadar air, vitamin C, dan mutu organoleptik. Jenis kemasan berpengaruh nyata terhadap kadar air, sedangkan lama penyimpanan berpengaruh nyata terhadap vitamin C. Kadar air produk pada kemasan metalized film naik dari 2,96% menjadi 5,09%, sementara produk pada kemasan aluminium foil relatif stabil (2,96-3,31%) dan tetap memenuhi batas SNI 3710:2018. Kandungan vitamin C produk turun dari 64,06 menjadi 16,71 mg/100 g. Tingkat kesukaan konsumen juga menurun selama penyimpanan, dengan penurunan yang lebih besar pada produk berkemasan metalized film. Hal ini sejalan dengan nilai WVTR aluminium foil yang lebih rendah (0,14 g/m²/hari) dibandingkan metalized film (0,65 g/m²/hari), sehingga aluminium foil lebih mampu menghambat masuknya uap air dan mempertahankan mutu freeze dried mangga daripada metalized film. | |
| dc.description.abstract | Freeze-dried mango is hygroscopic and porous, making it prone to moisture absorption and quality degradation during storage. This study aimed to determine the most suitable packaging for maintaining freeze-dried mango quality using a Factorial Completely Randomized Design with packaging type (aluminium foil and metalized film) and storage duration as factors. Parameters observed were moisture content, vitamin C, and organoleptic quality. Packaging type significantly affected moisture content, while storage duration significantly affected vitamin C. Moisture content in metalized film increased from 2.96% to 5.09%, whereas aluminium foil remained stable (2.96–3.31%) and met the SNI 3710:2018 limit. Vitamin C decreased from 64.06 to 16.71 mg/100 g. Consumer preference also declined throughout storage, with a greater decline in metalized film. Aluminium foil, with a lower WVTR (0.14 g/m²/day) than metalized film (0.65 g/m²/day), more effectively inhibited water vapor ingress and better maintained freeze-dried mango quality. | |
