      Abstract
      Meningkatnya kesadaran masyarakat akan pola hidup sehat mendorong perkembangan industri air minum pH tinggi, namun konsistensi karakteristik fisikokimia dan rasa antar lokasi pabrik masih menjadi tantangan yang dihadapi oleh industri. Analisis pengaruh rasio pencampuran air baku dan air RO terhadap karakteristik fisikokimia serta rasa air minum pH tinggi perlu dilakukan untuk dapat mengetahui rasio pencampuran yang menghasilkan karakteristik menyerupai produk pembanding dari pabrik B. Penelitian dilakukan secara eksperimental menggunakan dua rasio pencampuran air baku dan air RO, yaitu 70:30 dan 80:20, dengan analisis karakteristik fisikokimia, untuk karakteristik rasa dianalisis dengan uji segitiga. Hasil penelitian menunjukkan bahwa kedua rasio campuran berpengaruh terhadap karakteristik fisikokimia dan rasa air minum pH tinggi, meski beberapa parameter fisikokimia berbeda nyata dengan produk pembanding, rasio pencampuran 70:30 menghasilkan rasa yang tidak berbeda signifikan berdasarkan uji segitiga. Hasil tersebut menunjukkan bahwa perbedaan karakteristik fisikokimia tidak selalu berpengaruh terhadap penilaian rasa konsumen, sehingga rasio 70:30 dapat disarankan untuk harmonisasi rasa lintas pabrik.
       
      Increasing public awareness of healthy lifestyles has driven growth of the high-pH drinking water industry. However, maintaining consistent physicochemical characteristics and taste across production facilities remains a challenge faced by the industry. An analysis the effect of raw water and RO water mixing ratios on the determine the mixing ratio that produces characteristics similar to those of the reference product from Plant B. This experimental use the blending ratios of raw water and RO water, 70:30 and 80:20, with physicochemical characteristics analyzed and taste characteristics were evaluated using a triangle test. The result showed that both blending ratio affected the physicochemical characteristics and taste, although several physicochemical parameters differed significantly from the reference product, the taste of ratio 70:30 is weren’t significantly different based on the triangle test. These results indicate that differences in physicochemical characteristics doesn’t always affect consumer preference taste. Therefore, the blending ratio of 70:30 can be recommended for taste harmonization across production facilities.
