dc.description.abstractSirup merupakan produk minuman yang dapat ditambahkan pewarna pangan, seperti karmoisin, untuk menghasilkan warna yang menarik, namun stabilitas warnanya dapat dipengaruhi oleh kondisi penyimpanan. Penelitian ini menganalisis pengaruh tipe pewarna karmoisin, suhu penyimpanan (6°C, 27°C, dan 41°C), serta lama penyimpanan terhadap mutu sirup pisang ambon menggunakan Rancangan Acak Lengkap (RAL) faktorial tiga faktor. Hasil penelitian menunjukkan bahwa tipe pewarna, suhu, dan lama penyimpanan berpengaruh nyata (p<0,05) terhadap intensitas warna merah, viskositas, serta tingkat kesukaan panelis terhadap warna dan kekentalan. Karmoisin A memiliki stabilitas warna dan viskositas yang lebih baik dibandingkan karmoisin B. Penyimpanan pada suhu 6°C menghasilkan viskositas tertinggi (259,50 cP) dan merupakan perlakuan terbaik dalam mempertahankan mutu sirup pisang ambon. Sebaliknya, nilai pH (6,5), total padatan terlarut (65°Brix), serta tingkat kesukaan panelis terhadap aroma dan rasa tidak berbeda nyata pada seluruh perlakuan.
dc.description.abstractSyrup is a beverage product to which food colorants, such as carmoisine, can be added to produce an attractive color; however, its color stability may be affected by storage conditions. This study analyzed the effects of carmoisine type, storage temperature (6°C, 27°C, and 41°C), and storage duration on the quality of Ambon banana syrup using a three-factor factorial Completely Randomized Design (CRD). The results showed that carmoisine type, storage temperature, and storage duration significantly affected (p<0,05) red color intensity, viscosity, and panelists' preference for color and viscosity. Carmoisine A exhibited better color stability and viscosity than Carmoisine B. Storage at 6°C resulted in the highest viscosity (259,50 cP) and was the best treatment for maintaining the quality of Ambon banana syrup. In contrast, pH (6,5), total soluble solids (65°Brix), and panelists' preference for aroma and taste did not differ significantly among all treatments.
