| dc.description.abstract | Susu bubuk memiliki sifat higroskopis sehingga mutunya rentan menurun selama masa penyimpanan. Penelitian ini bertujuan untuk menduga umur simpan susu bubuk varian original dan cokelat hasil reformulasi dari PT XYZ menggunakan metode Accelerated Shelf Life Testing (ASLT) model Arrhenius. Pengujian dilakukan pada suhu 30 °C, 40,5 °C, dan 55 °C selama 56 hari, dengan suhu 8 °C sebagai kontrol. Analisis mencakup parameter kadar air, sensori, serta mikrobiologi, yang kemudian diolah menggunakan kinetika ordo 0 dan 1. Berdasarkan hasil pengolahan data, kadar air ditetapkan sebagai parameter kritis karena memiliki energi aktivasi terendah, yakni 11.408,28 kal/mol (original) dan 12.766,34 kal/mol (cokelat). Pendugaan umur simpan produk pada suhu 30 °C mencapai 440 hari (14,6 bulan) untuk varian original dan 429 hari (14,3 bulan) untuk varian cokelat. Sementara itu, hasil mikrobiologi menunjukkan penurunan Angka Lempeng Total (ALT) dari 2,2 × 10³ koloni/g (original) dan 2,0 × 10² koloni/g (cokelat) menjadi 1,5 × 10² dan 1,0 × 10¹ koloni/g pada akhir penyimpanan. Ketiadaan cemaran Coliform dan E. coli turut memastikan bahwa keamanan produk tetap terjaga dan sesuai dengan standar BPOM. | |
| dc.description.abstract | Milk powder is highly hygroscopic, making its quality susceptible to degradation during storage. This study aimed to estimate the shelf life of reformulated original and chocolate milk powder variants from PT XYZ using the Accelerated Shelf Life Testing (ASLT) Arrhenius model. Tests were conducted at 30 °C, 40.5 °C, and 55 °C for 56 days, with 8 °C as the control. Analyses included moisture content, microbiology, and sensory parameters, processed using zero- and first-order kinetics. Based on the data processing, moisture content was established as the critical parameter, yielding the lowest activation energy of 11,408.28 cal/mol (original) and 12,766.34 cal/mol (chocolate). The estimated shelf life at 30 °C reached 440 days (14.6 months) for the original variant and 429 days (14.3 months) for the chocolate variant. Meanwhile, microbiological evaluation showed a decreasing trend in Total Plate Count (TPC) from 2.2 × 10³ CFU/g (original) and 2.0 × 10² CFU/g (cokelat) to 1.5 × 10² and 1.0 × 10¹ CFU/g at the end. The absence of coliform and E. coli ensured that the product safety remained strictly compliant with BPOM standards. | |
