dc.description.abstractPenelitian ini dilakukan untuk menganalisis pengaruh jenis minyak dan suhu penggorengan terhadap ALB minyak, karakteristik mutu cassava crackers yang mencakup kadar air dan sifat organoleptik, serta penentuan perlakuan terbaik menggunakan metode indeks efektivitas De Garmo. Digunakan rancangan faktorial 2x2 dengan tiga ulangan, terdiri dari dua jenis minyak, yaitu minyak goreng sawit dan minyak biji bunga matahari, serta dua suhu penggorengan yaitu 170°C dan 180°C. Hasil penelitian menunjukkan bahwa jenis minyak berpengaruh nyata terhadap nilai ALB, namun suhu penggorengan tidak berpengaruh nyata. Kadar air cassava crackers dipengaruhi secara nyata oleh suhu penggorengan, namun jenis minyak dan interaksi antara kedua faktor tersebut tidak memberikan pengaruh yang nyata. Pada uji organoleptik, perlakuan berpengaruh nyata terhadap aroma, rasa, kerenyahan, dan penerimaan keseluruhan, tetapi tidak berpengaruh nyata pada warna dan sensasi berminyak. Perlakuan terbaik diperoleh pada penggorengan menggunakan minyak goreng sawit pada suhu 180°C. Perlakuan tersebut menghasilkan cassava crackers dengan karakteristik mutu terbaik.
dc.description.abstractThis study was conducted to analyze the effect of oil type and frying temperature on the FFA content of oil, the quality characteristics of cassava crackers including water content and organoleptic properties, and to determine the best treatment using the De Garmo effectiveness index method. A 2x2 factorial design with three replications was used, consisting of two types of oil, namely palm cooking oil and sunflower seed oil, and two frying temperatures, namely 170°C and 180°C. The results showed that the type of oil significantly affected the FFA value, but the frying temperature did not significantly affect. The moisture content of cassava crackers was significantly affected by the frying temperature, but the type of oil and the interaction between the two factors did not significantly affect. In the organoleptic test, the treatment significantly affected the aroma, taste, crispiness, and overall acceptance, but did not significantly affect the color and oily sensation. The best treatment was obtained when frying using palm cooking oil at a temperature of 180°C. Treatment produces cassava crackers with the best quality characteristics.
