dc.description.abstractß-Carotene is one of the major bioactive compounds in crude palm oil (CPO) with potential applications as a natural antioxidant. However, its extraction commonly relies on conventional organic solvents. This study evaluated the effects of Natural Deep Eutectic Solvent (NADES) composition and operating conditions on ß-carotene extraction from CPO. NADES formulations were screened by varying the Hydrogen Bond Acceptor(HBA), Hydrogen Bond Donor (HBD), molar ratio, and extraction time. ß-Carotene distribution was evaluated using UV-Visible spectrophotometry and confirmed by High Performance Liquid Chromatography (HPLC). The extracts were further characterized through ß-carotene recovery, saponification value, DPPH radical scavenging activity, and physicochemical properties of the selected NADES. The best extraction performance was obtained using Menthol:Camphor (1:1) with an extraction time of 90 min, resulting in a ß-carotene recovery of 21.80%, the lowest saponification value of 23.78 ± 0.49 mg KOH/g, and antioxidant activity of 42.07 ± 0.18%. HPLC analysis confirmed the presence of ß-carotene with a retention time of approximately 8.93 min. These findings demonstrate that menthol-based NADES, particularly Menthol:Camphor, has potential as a greener alternative solvent for ß-carotene extraction from CPO.
