      Abstract
      Proses ekstrusi merupakan tahapan krusial dalam pembuatan snack pellet, di mana pengaturan mesin sangat menentukan kualitas produk akhir. Penelitian ini bertujuan menguji pengaruh variasi kecepatan screw dan feeder ekstruder terhadap karakteristik fisik snack pellet di PT XYZ, serta menentukan parameter operasi paling optimal. Penelitian menggunakan Rancangan Acak Lengkap (RAL) dengan 10 kombinasi kecepatan. Indikator yang dievaluasi meliputi kadar air, densitas curah, luas penampang, ketebalan, dan bobot produk. Data dianalisis menggunakan Analysis of Variance (ANOVA) dan dilanjutkan dengan Indeks De Garmo. Hasil menunjukkan bahwa variasi kecepatan berpengaruh signifikan terhadap seluruh parameter fisik. Berdasarkan optimasi, kombinasi kecepatan screw 10 Hz dan feeder 8,8 Hz ditetapkan sebagai pengaturan terbaik. Konfigurasi ini menghasilkan produk dengan densitas rendah, ukuran seragam, dan kadar air optimal untuk menjaga stabilitas umur simpan.
       
      The extrusion process is a crucial stage in the manufacture of snack pellets, where the machine settings greatly determine the quality of the final product. This study aims to test the effect of screw and feeder extruder speed variations on the physical characteristics of snack pellets in PT XYZ, as well as determine the most optimal operating parameters. The study used a Complete Random Design with 10 speed combinations. The indicators evaluated included moisture content, bulk density, cross-sectional area, thickness, and product weight. The data was analyzed using the Analysis of Variance (ANOVA) and continued with the De Garmo Index. The results showed that the variation in speed had a significant effect on all physical parameters. Based on optimization, the combination of a 10 Hz screw speed and an 8.8 Hz feeder is set as the best setting. This configuration results in products with low density, uniform size, and optimal moisture content to maintain stable shelf life.
