      Perancangan Sistem Pengendalian Mutu yang Terstruktur dengan menggunakan DMAIC Six Sigma Pada PT XYZ

      Abstract
      PT XYZ merupakan perusahaan manufaktur pangan yang memproduksi bolu lapis berbahan dasar talas. Tingginya skala produksi menimbulkan tantangan dalam menjaga konsistensi kualitas, sehingga proyek ini bertujuan mengidentifikasi jenis cacat, menganalisis penyebabnya, serta merumuskan solusi pengendalian mutu menggunakan metodologi Six Sigma DMAIC. Tahap Define melalui diagram Pareto mengidentifikasi dua Critical to Quality (CTQ), yaitu tinggi produk kurang dari 4 cm (41,61%) dan tekstur kering (30,20%), yang secara kumulatif menyumbang sekitar tiga perempat total kecacatan. Tahap Measure menunjukkan proses berada dalam kondisi terkendali dengan rata-rata level sigma 3,75 dan DPMO berkisar 7.575,76 hingga 18.830,13. Tahap Analyze melalui fishbone diagram mengungkapkan bahwa akar masalah utama adalah belum adanya standarisasi toleransi gramasi pada depositor dan sistem pengawasan suhu steam tunnel. Pada tahap Improve, Solution Selection Matrix yang dipadukan dengan Metode Perbandingan Eksponensial (MPE) menghasilkan dua solusi prioritas, yaitu standarisasi depositor dan pengawasan suhu proses produksi, yang selanjutnya dijabarkan dalam rencana tindakan 5W+1H pada tahap Control. Proyek ini diharapkan menjadi acuan perusahaan dalam menekan tingkat kecacatan dan meningkatkan kapabilitas proses produksi secara berkelanjutan.
       
      PT XYZ is a food manufacturing company producing a taro-based layered sponge cake as its flagship product. The large production scale and high market demand present challenges in maintaining product quality consistency, necessitating a structured, data-driven quality control system using the Six Sigma DMAIC methodology. Define stage, using a Pareto diagram, identified two Critical to Quality (CTQ) characteristics: product height below 4 cm (41.61%) and dry texture (30.20%), which together accounted for approximately three-quarters of total defects. The Measure stage confirmed the process was statistically in-control, with an average sigma level of 3.75 and DPMO ranging from 7,575.76 to 18,830.13. Fishbone diagram analysis in the Analyze stage revealed that the primary root causes were the absence of standardized weight tolerance for the depositor and inconsistent temperature monitoring in the steam tunnel. Through a Solution Selection Matrix combined with the Exponential Comparison Method (ECM) in the Improve stage, two priority solutions were selected: depositor standardization and process temperature monitoring, which were further elaborated into a 5W+1H action plan in the Control stage. This research is expected to serve as a reference for reducing product defect rates and continuously improving production process capability.
