      Abstract
      Ampas bawang merah menjadi salah satu limbah agroindustri yang berpotensi dimanfaatkan sebagai bahan pakan, tetapi kandungan Acid Detergent Fiber atau ADF yang tinggi menyebabkan tingkat kecernaannya rendah. Penelitian ini bertujuan mengembangkan sistem fermentasi untuk meningkatkan kecernaan ampas bawang merah menggunakan bakteri lignolitik OBF412 di PT XYZ. Penelitian dilakukan melalui fermentasi kultur skala kecil untuk menentukan frekuensi pengadukan optimum, kemudian dilanjutkan dengan pengembangan bioproses menggunakan drum berputar. Keberhasilan fermentasi dievaluasi berdasarkan penurunan kadar Acid Detergent Fiber (ADF), serta didukung oleh pengamatan suhu, pH, dan kadar air selama fermentasi. Hasil penelitian menunjukkan bahwa fermentasi kultur skala kecil dengan pengadukan setiap 12 jam menghasilkan kadar ADF terendah sebesar 27,22%, lebih rendah dibandingkan tanpa pengadukan sebesar 30,50% dan pengadukan setiap 24 jam sebesar 29,39%. Pada tahap pengembangan bioproses menggunakan drum berputar, perbaikan formulasi dan metode pencampuran mampu menurunkan kadar ADF dari 32,26% pada Pengembangan Bioproses 1 menjadi 28,36% pada Pengembangan Bioproses 2. Hasil tersebut menunjukkan bahwa pengembangan sistem fermentasi mampu meningkatkan degradasi serat sehingga berpotensi meningkatkan kecernaan ampas bawang merah sebagai bahan pakan.
       
      Shallot waste is an agro-industrial by-product with the potential to be utilized as an animal feed ingredient. However, its high Acid Detergent Fiber (ADF) content limits its digestibility. This study aimed to develop a fermentation system to improve the digestibility of shallot waste using the lignolytic bacterium OBF412 at PT XYZ. The study was conducted through small-scale culture fermentation to determine the optimum mixing frequency, followed by bioprocess development using a drum berputar. Fermentation performance was evaluated based on the reduction of Acid Detergent Fiber (ADF) content and supported by monitoring temperature, pH, and moisture content throughout the fermentation process. The results showed that small-scale culture fermentation with mixing every 12 hours produced the lowest ADF content of 27.22%, compared with 30.50% without mixing and 29.39% with mixing every 24 hours. During the bioprocess development stage using the drum berputar, improvements in the formulation and mixing method reduced the ADF content from 32.26% in Bioprocess Development 1 to 28.36% in Bioprocess Development 2. These findings indicate that the developed fermentation system enhanced fiber degradation, thereby improving the potential digestibility of shallot waste as an animal feed ingredient.
