dc.description.abstractKopi instan merupakan produk pangan yang banyak diminati konsumen. Konsistensi berat bersih kopi instan penting untuk kepuasan konsumen dan kepatuhan regulasi BDKT. Penelitian ini bertujuan meningkatkan kapabilitas proses filling kopi instan di PT XYZ menggunakan statistical process control, meliputi I-MR chart dan indeks Cp dan Cpk dengan Minitab 22. Kondisi awal menunjukkan rata-rata berat bersih 20,028 gram, standar deviasi 0,093 gram, Cp 0,71, dan Cpk 0,62, yang mengindikasikan kapabilitas proses belum memadai meskipun telah memenuhi persyaratan BDKT. Diagram Ishikawa dan 5 why analysis mengidentifikasi penyebab variasi dari berbagai faktor penyebab permasalahan. Perbaikan berupa penyesuaian setting dosing, penggantian thermohygrometer, dan perbaikan AC menurunkan standar deviasi menjadi 0,069 gram, defect overweight dari 2,78% menjadi 0,50% dan underweight dari 0,58% menjadi 0,35% serta meningkatkan Cp menjadi 1,10 dan Cpk menjadi 1,07, dengan kepatuhan BDKT tetap terjaga. Hasil ini menunjukkan peningkatan kapabilitas proses meski belum mencapai ambang ideal 1,33.
dc.description.abstractInstant coffee is a food product favored by many consumers. Consistent net weight in instant coffee is essential for consumer satisfaction and compliance with Indonesia's BDKT regulation. This study aimed to improve the filling process capability at PT XYZ using statistical process control, employing I-MR control charts and Cp/Cpk indices with Minitab 22. Baseline data showed a mean net weight of 20,028 g, standard deviation of 0,093 g, Cp of 0,71, and Cpk of 0,62, indicating the process was not yet capable despite meeting BDKT requirements. Ishikawa diagrams and 5 why analysis identified various contributing factors behind causes of variation. Corrective actions by adjusting the dosing setting, changing a thermohygrometer, and repairing the AC. That actions reduced the standard deviation to 0,069 g, defects overweight from 2,78% to 0,50% and underweight from 0,58% to 0,35%, and raised Cp to 1,10 and Cpk to 1,07, while maintaining BDKT compliance. These results indicate improved process capability, though the ideal threshold of 1,33 has not yet been reached.
