      Reformulasi Garam Fungsional Berbasis Rumput Laut Hijau Ulva Lactuca Untuk Peningkatan Cita Rasa dan Penerimaan Sensori

      Abstract
      Penelitian ini bertujuan mengoptimalkan fortifikasi NaCl dan KCl (1:1) pada garam fungsional berbasis Ulva lactuca untuk meningkatkan kualitas sensori, mempertahankan rasio Na:K sebagai garam diet, dan aktivitas antioksidan. Garam difortifikasi dengan NaCl–KCl 20–26% dan dianalisis meliputi kadar NaCl, komposisi mineral, rasio Na:K, logam berat, total fenolik, total flavonoid, aktivitas antioksidan (DPPH), serta karakteristik sensori. Fortifikasi meningkatkan kadar NaCl dari 13,44% menjadi 44,62% dengan rasio Na:K mendekati 1 pada seluruh perlakuan. Kadar logam berat memenuhi standar nasional. Garam rumput laut mengandung total fenolik 58,40±2,80 mg GAE/g, total flavonoid 15,28±0,40 mg QE/g, dan aktivitas antioksidan sedang (IC50 118,41±2,09 ppm). Fortifikasi 24% memberikan penerimaan sensori terbaik dengan karakter salty, umami, dan seaweed, sehingga berpotensi dikembangkan sebagai garam fungsional rendah natrium untuk mendukung diet hipertensi.
       
      This study aimed to optimize NaCl and KCl (1:1) fortification in Ulva lactuca-based functional salt to improve sensory quality while maintaining a dietary Na:K ratio and antioxidant activity. Seaweed salt was fortified with 20–26% NaCl– KCl and analyzed for NaCl content, mineral composition, Na:K ratio, heavy metals, phenolics, flavonoids, antioxidant activity (DPPH), and sensory properties. Fortification increased NaCl content from 13.44% to 44.62% while maintaining a Na:K ratio below 1. Heavy metal levels complied with national standards. The salt contained 58.40±2.80 mg GAE/g total phenolics, 15.28±0.40 mg QE/g total flavonoids, and showed moderate antioxidant activity (IC50 = 118.41±2.09 ppm). The 24% fortification achieved the highest sensory acceptance, characterized by salty, umami, and seaweed attributes, indicating its potential as a low-sodium functional salt for hypertension dietary management.
