      Abstract
      This study aimed to evaluate ultraviolet-A (UV-A) light as a visual aid in the sorting process of crab products at PT XYZ. Observations were conducted on six crab product types using two sorting methods, non-UV and UV-A. Physical quality parameters included shell fragments and sample weight, while sensory quality parameters included texture, aroma, taste, and meat integrity. The data were analyzed descriptively and using Rank Transform ANOVA. The results showed that UV-A increased the number of detected shell fragments compared with non-UV sorting, namely 11.60 ± 4.49 and 8.33 ± 3.69, respectively. Sample weight was more affected by product type. UV-A did not significantly affect texture, aroma, taste, or meat integrity. Therefore, UV-A can be used as a supporting sorting method to improve shell detection without reducing the sensory quality of crab products.
       
      Penelitian ini bertujuan mengevaluasi penggunaan cahaya ultraviolet-A (UV-A) sebagai alat bantu visual pada sortasi produk rajungan di PT XYZ. Pengamatan dilakukan pada enam jenis produk rajungan dengan dua metode sortasi, yaitu non-UV dan UV-A. Parameter mutu fisik meliputi jumlah shell dan berat sampel, sedangkan parameter mutu sensori meliputi tekstur, aroma, rasa, dan keutuhan daging. Data dianalisis secara deskriptif dan menggunakan Rank Transform ANOVA. Hasil penelitian menunjukkan bahwa UV-A meningkatkan jumlah shell yang terdeteksi dibandingkan non-UV, yaitu 11,60 ± 4,49 dan 8,33 ± 3,69. Berat sampel lebih dipengaruhi oleh jenis produk. Penggunaan UV-A tidak berpengaruh nyata terhadap tekstur, aroma, rasa, dan keutuhan daging. Dengan demikian, UV-A dapat digunakan sebagai metode pendukung sortasi untuk meningkatkan deteksi shell tanpa menurunkan mutu sensori rajungan.
