dc.description.abstractIndustri pangan memiliki keterikatan terhadap keamanan produk yang dihasilkan yang disebut dengan keamanan pangan, dengan keterikatan tersebut industri pangan diwajibkan menghasilkan produk yang tidak hanya bermutu secara sensori, tetapi juga aman secara mikrobiologis. Salah satu permasalahan cemaran mikrobiologi yang masih menjadi tantangan dalam industri pangan disebabkan karena implementasi higiene dan sanitasi yang kurang optimal. Penelitian ini bertujuan mengidentifikasi faktor higiene penyebab Out of Specification (OOS) cemaran Enterobacteriaceae pada produk sweet sauce dan mengevaluasi efektifitas tindakan perbaikan yang diterapkan. Identifikasi akar penyebab dilakukan menggunakan diagram fishbone, why-why Analysis, dan metode FMEA sebagai metode penilaian berbasis risiko, serta efektivitas perbaikan dianalisis menggunakan Wilcoxon Signed Rank Test. Hasil penelitian menunjukkan bahwa faktor penyebab OOS berasal dari aspek sanitasi mesin, lingkungan, higienitas operator, metode, dan pengukuran yang belum optimal. Implementasi tindakan perbaikan berhasil menurunkan cemaran Enterobacteriaceae secara signifikan (p<0,05), yang ditunjukkan oleh penurunan hasil analisis dan stabilitas mutu mikrobiologi produk saus manis
dc.description.abstractThe food industry is bound by the requirement to ensure the safety of the products it produces, known as food safety; as such, the food industry is obliged to produce products that are not only of high sensory quality but also microbiologically safe. One of the issues relating to microbiological contamination that remains a challenge in the food industry is caused by sub-optimal implementation of hygiene and sanitation practices. This study aims to identify the hygiene factors causing Out of Specification (OOS) contamination by Enterobacteriaceae in sweet sauce products and to evaluate the effectiveness of the corrective actions implemented. Root cause analysis was carried out using a fishbone diagram, why-why analysis and the FMEA method as a risk-based assessment approach, while the effectiveness of the corrective actions was evaluated using the Wilcoxon Signed Rank Test. The results of the study indicate that the factors causing OOS stem from sub-optimal aspects of machine sanitation, the environment, operator hygiene, methods, and measurement procedures. The implementation of corrective actions succeeded in significantly reducing Enterobacteriaceae contamination (p<0.05), as demonstrated by a reduction in analysis results and improved microbiological quality stability of the sweet sauce products.
