| dc.description.abstract | Es krim umumnya memiliki kandungan lemak yang tinggi sehingga diperlukan inovasi produk yang lebih sehat. Sari kedelai sebagai alternatif pengganti susu hewani dan ubi jalar ungu sebagai bahan pangan nabati dimanfaatkan dalam pengembangan es krim rendah lemak. Penelitian ini bertujuan menentukan formula terbaik serta menganalisis organoleptik, fisik, kandungan gizi, dan kontribusi zat gizi terhadap Acuan Label Gizi. Penelitian menggunakan tiga formulasi, yaitu F1 (2:1), F2 (1:1), dan F3 (1:2). Formula terbaik ditentukan menggunakan metode De Garmo, kemudian dilakukan analisis proksimat dan kontribusi zat gizi. Hasil penelitian menunjukkan F2 merupakan formula terbaik. Formulasi memberikan pengaruh terhadap organoleptik dan overrun, tetapi tidak pada total padatan dan waktu leleh. Formula terpilih memiliki kadar air 71,96%, abu 0,23%, protein 0,86%, lemak 0,71%, karbohidrat 26,24%, dan serat kasar 0,36%. | |
| dc.description.abstract | Ice cream generally has a high fat content, so healthier product innovation is needed. Soy milk as an alternative to animal milk and purple sweet potato as a plant-based food ingredient are used in the development of low-fat ice cream. This study aims to determine the best formula and analyze the organoleptic, physical, nutritional content, and nutrient contribution to the Nutrition Label Reference. The study used three formulations, namely F1 (2:1), F2 (1:1), and F3 (1:2). The best formula was determined using the De Garmo method, then proximate analysis and nutrient contribution were carried out. The results showed that F2 was the best formula. The formulation had an effect on organoleptic and overrun, but not on total solids and melting time. The selected formula had a water content of 71.96%, ash 0.23%, protein 0.86%, fat 0.71%, carbohydrate 26.24%, and crude fiber 0,36%. | |
