dc.description.abstractNatrium banyak terkandung dalam produk bumbu pangan dan berperan penting dalam cita rasa serta karakteristik produk. Tingginya konsumsi natrium pada bumbu kaldu ayam dan jamur memerlukan pengendalian mutu yang akurat dan andal melalui metode analisis yang tervalidasi. Penelitian ini bertujuan memvalidasi metode analisis kadar natrium pada bumbu kaldu ayam dan jamur menggunakan spektrofotometri serapan atom (AAS) sesuai persyaratan SNI ISO/IEC 17025:2017, meliputi parameter linearitas, LOD, LOQ, presisi, akurasi, dan robustness. Hasil validasi menunjukkan uji linearitas dengan persamaan regresi y = 0,0135x + 0,2193 dan koefisien korelasi (r) sebesar 0,9960, nilai presisi (%RSD) sebesar 0,78% yang berada di bawah batas ? RSD Horwitz (1,67%), serta nilai akurasi (%recovery) berkisar 94,4385%–100,1207% sesuai kriteria AOAC (2022). Seluruh parameter yang diuji memenuhi kriteria keberterimaan, sehingga metode ini dapat diterapkan untuk pengujian rutin di laboratorium industri pangan XYZ.
dc.description.abstractSodium is widely contained in food seasoning products and plays an important role in the flavor and characteristics of the product. The high sodium consumption in chicken and mushroom broth seasoning requires accurate and reliable quality control through a validated analytical method. This study aims to validate the analytical method for determining sodium content in chicken and mushroom broth seasoning using Atomic Absorption Spectrophotometry (AAS) in accordance with the requirements of SNI ISO/IEC 17025:2017, covering the parameters of linearity, LOD, LOQ, precision, accuracy, and robustness. The validation results showed a linearity test with the regression equation y = 0.0135x + 0.2193 and a correlation coefficient (r) of 0.9960, a precision value (%RSD) of 0.78% which was below the ? RSD Horwitz limit (1.67%), and an accuracy value (%recovery) ranging from 94,4385%–100,1207% in accordance with the AOAC (2022) criteria. All tested parameters met the acceptance criteria, so this method can be applied for routine testing in the XYZ food industry laboratory.
