dc.description.abstractKeju olahan mozzarella lembaran merupakan produk pangan dengan kadar air relatif tinggi sehingga rentan mengalami penurunan mutu selama penyimpanan. Penelitian ini bertujuan menduga umur simpan keju olahan mozzarella lembaran di PT XYZ menggunakan metode Accelerated Shelf Life Testing (ASLT) dengan pendekatan model Arrhenius. Sampel disimpan pada suhu 35 °C, 45 °C, dan 55 °C selama 56 hari, dengan suhu 30 °C sebagai penyimpanan aktual. Parameter yang dianalisis meliputi kadar air, pH, warna (L*, a*, b*), serta sensori warna, rasa, aroma, dan tekstur. Data dianalisis menggunakan model kinetika ordo nol dan ordo satu, kemudian dimodelkan dengan persamaan Arrhenius untuk menentukan energi aktivasi dan parameter kritis. Hasil penelitian menunjukkan bahwa peningkatan suhu mempercepat penurunan mutu produk. Parameter sensori aroma memiliki energi aktivasi terendah, yaitu 6.984,9 kal/mol, sehingga ditetapkan sebagai parameter kritis. Berdasarkan parameter tersebut, umur simpan keju olahan mozzarella lembaran pada suhu 30 °C diperkirakan selama 275 hari atau sekitar 9 bulan. Hasil ini dapat menjadi dasar penetapan umur simpan produk.
dc.description.abstractProcessed mozzarella cheese slices are high-moisture food products that are prone to quality deterioration during storage. This study aimed to estimate the shelf life of processed mozzarella cheese slices at PT XYZ using the Accelerated Shelf Life Testing (ASLT) method with the Arrhenius approach. Samples were stored at 35 °C, 45 °C, and 55 °C for 56 days, with 30 °C as the actual storage temperature. The quality parameters included moisture content, pH, color (L*, a*, b*), and sensory attributes of color, taste, aroma, and texture. Data were analyzed using zero-and first-ordor kinetic models followed by Arrhenius modeling to determine the activation energy and critical parameter. The results showed that higher storage temperatures accelerated quality deterioration. Sensory aroma had the lowest activation energy (6,984.9 cal/mol) and was identified as the critical parameter. Based on this parameter, the shelf life of processed mozzarella cheese slices at 30 °C was estimated to be 275 days (approximately 9 months). These findings provide a scientific basis for determining the product shelf life.
