Kombucha cascara merupakan produk minuman fermentasi pangan bernilai tinggi yang memanfaatkan limbah kulit buah kopi. Kombucha cascara memiliki sensivitas terhadap kualitas bahan baku dan proses fermentasi yang memiliki risiko variasi mutu dan keamana pangan yang tinggi jika proses produksi tidak dikendalikan serta belum tersedianya sistem pengendalian mutu yang menyeluruh dan berkelanjutan untuk skala komersial guna menjamin konsistensi mutu produk akhir. Tujuan dari penelitian adalah merancang pengendalian mutu produk kombucha cascara dan standar operasi mutu (SOP QC) produk kombucha cascara. Tahapan yang dilakukan meliputi identifikasi bahaya menggunakan prinsip HACCP, penetapan titik kendali kritis (CCP), serta penyusunan parameter standar untuk bahan baku seperti cascara, gula, SCOBY dan starter liquid serta parameter standar proses hingga akhir produk. Hasil dirumuskan dalam sistem pengendalian mutu yang mencakup penentuan standar bahan baku, lingkungan serta analisis bahaya pada 12 tahapan proses. Melalui metode pohon keputusan, ditetapkan 4 titik kendali kritis (CCP) yang meliputi: penerimaan bahan baku (cascara dan non-cascara), proses fermentasi, pembotolan, serta penyimpanan dingin. Kemudian telah disusun 7 prosedur standar operasi mutu (SOP QC) dengan formulir monitoring proses dari penerimaan bahan baku hingga tahap pendistribusian produk.

Kombucha cascara is sensitive to the quality of raw materials and the fermentation process, which poses a high risk of quality variation and food safety if the production process is not controlled and a comprehensive and sustainable quality control system is not yet available on a commercial scale to ensure consistent quality of the final product. The purpose of this project is to design quality control for kombucha cascara products and quality operating standards (SOP QC) for kombucha cascara products. The stages include hazard identification using the HACCP principle, determining critical control points (CCPs), and developing standard parameters for raw materials such as cascara, sugar, SCOBY and starter liquid as well as standard process parameters until the final product. The results includes design of a quality control system that includes determining raw material standards, environmental standards, and hazard analysis at 12 process stages. Through the decision tree method, 4 critical control points (CCPs) are determined, including: raw material receipt (cascara and non-cascara), fermentation process, bottling, and cold storage. Then, 7 standard quality operating procedures (SOP QC) were prepared with process monitoring forms from receiving raw materials to the product distribution stage.
