| dc.description.abstract | Fillet ikan patin merupakan produk perikanan yang mudah rusak (perishable)
akibat tingginya kadar air sehingga rentan mengalami aktivitas enzimatis dan
pertumbuhan mikroorganisme selama penyimpanan. Penelitian ini bertujuan
menentukan konsentrasi terbaik ekstrak daun sirih (Piper betle L.) guna
menghambat kemunduran mutu fillet ikan patin selama 12 hari penyimpanan suhu
chilling. Perlakuan ekstrak dengan konsentrasi 1%, 1,25%, 1,5%, dan kontrol.
Parameter pengujian meliputi sensori, pH, total volatile base (TVB), total plate
count (TPC), dan histologi. Ekstrak daun sirih menunjukkan aktivitas antioksidan
kuat dengan nilai IC50 sebesar 70,81 ppm. Perlakuan konsentrasi 1,5% merupakan
yang terbaik dalam mempertahankan mutu fillet ikan patin hingga hari ke-12
dengan nilai TVB 22,10 mg N/100 g dan TPC 4,84 log CFU/g, serta mampu
memperlambat penurunan mutu sensori, menekan peningkatan pH, dan
mempertahankan struktur jaringan dibandingkan kontrol. Ekstrak daun sirih hijau
berpotensi sebagai preservasi alami fillet ikan patin dengan batas penerimaan
organoleptik hingga hari ke-6 penyimpanan suhu chilling. | |
| dc.description.abstract | Pangasius fillet is a highly perishable fishery product due to its high
moisture content, making it susceptible to enzymatic activity and microbial growth
during storage. This study aimed to determine the optimal concentration of betel
leaf (Piper betle L.) extract to inhibit quality deterioration of Pangasius fillet during
12 days of chilled storage. Treatments consisted of 1%, 1.25%, 1.5% extract, and a
control. Quality parameters included sensory characteristics, pH, total volatile base
(TVB), total plate count (TPC), and histological structure. The extract exhibited
strong antioxidant activity with an IC50 value of 70.81 ppm. The 1.5% extract was
the most effective treatment, maintaining Pangasius fillet quality for up to 12 days
of chilled storage, with TVB and TPC values of 22.10 mg N/100 g and 4.84 log
CFU/g, respectively. It also slowed sensory deterioration, suppressed pH increase,
and preserved tissue structure compared with the control. Green betel leaf extract
has the potential to serve as a natural preservative for Pangasius fillets, with
organoleptic acceptability maintained for up to 6 days under chilled storage. | |
