| dc.description.abstract | Autism Spectrum Disorder (ASD) merupakan gangguan perkembangan
saraf yang memengaruhi fungsi kognitif, perilaku, dan interaksi sosial. Salah satu
pendekatan gizi yang direkomendasikan untuk membantu meminimalisir gejala
ASD adalah penerapan diet Gluten-Free Casein-Free (GFCF). Penelitian ini
bertujuan mengembangkan CHIKOKIES, cookies berbasis talas beneng, kacang
koro, dan daun sirih cina sebagai alternatif pangan selingan bebas gluten dan bebas
kasein bagi anak dengan ASD. Penelitian menggunakan metode eksperimental
dengan Rancangan Acak Lengkap (RAL) yang terdiri atas tiga formulasi (F1, F2,
dan F3). Hasil penelitian menunjukkan bahwa F1 merupakan formulasi terbaik
berdasarkan ranking WSM dan uji organoleptik. Tingkat penerimaan produk pada
anak dengan ASD berkisar 78–86%. Analisis kandungan gizi F1 menunjukkan
energi sebesar 420 kkal, protein 11,92 g, lemak 19,32 g, karbohidrat 49,23 g, dan
serat pangan 15,87 g. Analisis gluten menunjukkan produk tidak mengandung
gluten sehingga memenuhi persyaratan sebagai pangan bebas gluten. CHIKOKIES
berpotensi menjadi alternatif pangan selingan bergizi yang mendukung penerapan
diet GFCF pada anak dengan ASD. | |
| dc.description.abstract | Autism Spectrum Disorder (ASD) is a neurodevelopmental disorder that
affects communication, social interaction, and behavior. The Gluten-Free Casein
Free (GFCF) diet has been proposed as a nutritional strategy to help alleviate ASD
symptoms. This study aimed to develop CHIKOKIES, a gluten-free and casein-free
functional cookie formulated from beneng taro, koro bean, and Chinese betel leaf
as an alternative snack for children with ASD. This study employed an experimental
design using a Completely Randomized Design (CRD) with three formulations (F1,
F2, and F3). Formulation F1 was identified as the optimum formulation based on
sensory evaluation and WSM analysis. Product acceptability among children with
ASD ranged from 78% to 86%. Nutritional analysis of F1 revealed 420 kcal of
energy, 11.92 g protein, 19.32 g fat, 49.23 g carbohydrates, and 15.87 g dietary
fiber. Gluten analysis confirmed that no detectable gluten was present, allowing the
product to be classified as gluten-free. CHIKOKIES has the potential to serve as a
nutritious functional snack that supports the implementation of the GFCF diet for
children with ASD. | |
