      Abstract
      Traceability berperan penting dalam menjamin keamanan pangan pada industri inflight catering. Penelitian ini bertujuan menganalisis efisiensi dan kinerja penelusuran dokumen pada sistem paper-based traceability tanpa dan dengan Batch ID dalam produksi Fried Whitefish di PT XYZ. Penelitian menggunakan pendekatan kuantitatif komparatif melalui lima simulasi backward tracing pada sampel bahan baku ikan dori. Efisiensi dinilai berdasarkan waktu penelusuran, sedangkan kinerja dokumen dievaluasi menggunakan recall, precision, dan F-measure. Penerapan Batch ID menurunkan rata-rata waktu penelusuran dari 51,8 menjadi 18,2 menit dengan efisiensi sebesar 64,9%. Uji paired sample t-test menunjukkan perbedaan waktu yang signifikan (p<0,001). Recall kedua metode mencapai 100%, sedangkan precision meningkat dari 94,6% menjadi 100% dan F-measure dari 97,3% menjadi 100%. Hasil tersebut menunjukkan bahwa Batch ID mampu meningkatkan efisiensi, ketepatan, dan konsistensi penelusuran dokumen traceability.
       
      Traceability is essential for ensuring food safety in the inflight catering industry. This study analyzed the efficiency and document retrieval performance of paper-based traceability systems without and with Batch ID in Fried Whitefish production at PT XYZ. A comparative quantitative approach was applied through five backward-tracing simulations using fish Dori production samples. Efficiency was assessed based on document retrieval time, while performance was evaluated using recall, precision, and F-measure. Batch ID implementation reduced the average retrieval time from 51,8 to 18,2 minutes, resulting in 64,9% efficiency. The paired-sample t-test indicated a significant time difference (p<0.001). Recall reached 100% for both systems, while precision increased from 94,6% to 100% and F-measure from 97,3% to 100%. These findings show that Batch ID improved the efficiency, accuracy, and consistency of traceability document retrieval.
