| dc.description.abstract | Cumi-cumi (Loligo sp.) merupakan hasil perikanan yang mudah mengalami kemunduran mutu sehingga memerlukan penyimpanan beku untuk mempertahankan kualitasnya. Penelitian ini bertujuan menganalisis perubahan mutu cumi-cumi selama penyimpanan beku pada suhu -20°C, dengan jangka waktu 1 hari, 1 tahun, dan 2 tahun. Parameter yang diamati meliputi organoleptik, drip loss, pH, total plate count (TPC), total volatile base (TVB), dan mikrostruktur menggunakan scanning electron microscopy (SEM). Hasil uji organoleptik cumi-cumi pada sampel C dengan perlakuan penyimpanan 2 tahun memberikan nilai rendah, yaitu 5,67. Nilai parameter pH, TPC, maupun TVB untuk cumi-cumi dengan perlakuan penyimpanan 2 tahun nilai yang diperoleh adalah pH 7,05, TPC 5,8 log CFU/g, dan TVB 64,20 mgN/100 g. Ketiga nilai tersebut berada di atas batas maksimum yang diperkenankan. Pengamatan SEM menunjukkan kerusakan mikrostruktur berupa pori, retakan, dan hilangnya integritas serat otot akibat rekristalisasi es dan denaturasi protein, semakin lama waktu penyimpanan beku. Secara keseluruhan, penyimpanan beku pada suhu -20°C masih dapat mempertahankan mutu cumi-cumi hingga masa penyimpanan 1 tahun. Namun pada masa penyimpanan 2 tahun terdapat tanda penurunan mutu yang menyebabkannya tidak layak dikonsumsi. | |
| dc.description.abstract | Squid (Loligo sp.) is a highly perishable fishery product therefore, frozen storage is required to maintain its quality. This study aimed to analyze changes in squid quality during frozen storage at -20°C for 1 day, 1 year, and 2 years. The organoleptic assessment of squid in sample C stored for 2 years yielded a low score of 5.67. The values obtained for squid stored for 2 years were pH 7.05, TPC 5.8 log CFU/g, and TVB 64.20 mg N/100 g. All three values exceeded the maximum acceptable limits. SEM observations revealed microstructural damage characterized by pores, cracks, and loss of muscle fiber integrity due to ice recrystallization and protein denaturation, which became more pronounced with prolonged frozen storage. Overall, frozen storage at -20°C was able to maintain the quality of squid for up to 1 year. However, after 2 years of storage, signs of quality deterioration were evident, rendering the squid unsuitable for consumption. | |
