      Karakteristik Mutu dan Konsumsi Energi pada Produksi Semi-refined Carrageenan Berbantu Gelombang Ultrasonik secara Kontinu

      Abstract
      Produksi Semi-refined Carrageenan (SRC) secara konvensional umumnya dilakukan pada suhu tinggi dan waktu proses yang lama sehingga membutuhkan konsumsi energi yang besar. Penelitian ini bertujuan mengevaluasi karakteristik mutu dan konsumsi energi pada produksi SRC berbantu gelombang ultrasonik secara kontinu serta membandingkannya dengan metode konvensional. Produksi SRC dilakukan menggunakan larutan KOH 8% pada suhu 40 dan 50 °C selama 30 dan 60 menit, kemudian dibandingkan dengan metode konvensional pada suhu 80 °C selama 2 jam. Kondisi proses pada suhu 50 °C selama 60 menit menghasilkan rendemen sebesar 42,83% yang tidak berbeda nyata dengan metode konvensional sebesar 45,54%. Penggunaan gelombang ultrasonik secara kontinu menurunkan konsumsi energi hingga 18,2% dan meningkatkan energy productivity hingga 13,58%. Kekuatan gel SRC yang dihasilkan (100,93 g/cm²) masih lebih rendah dibandingkan metode konvensional (177,07 g/cm²), dengan indeks sulfat yang lebih tinggi. Analisis FTIR menunjukkan karakteristik khas ?-karaginan pada seluruh sampel tanpa perbedaan struktur fungsional yang signifikan. Produksi SRC berbantu gelombang ultrasonik secara kontinu berpotensi menjadi alternatif proses yang lebih singkat, hemat energi, dan berkelanjutan.
       
      Conventional production of Semi-refined Carrageenan (SRC) requires high temperatures and long processing times, resulting in high energy consumption. This study evaluated the quality characteristics and energy consumption of continuous ultrasound-assisted SRC production compared with the conventional method. SRC was produced using 8% KOH at 40 and 50 °C for 30 and 60 min, while the conventional process was conducted at 80 °C for 2 h. The highest yield (42.83%) was obtained at 50 °C for 60 min and was not significantly different from that of the conventional method (45.54%). Continuous ultrasound reduced energy consumption by 18.2% and increased energy productivity by 13.58%. Although gel strength was lower than that of the conventional product, FTIR analysis confirmed the characteristic functional groups of ?-carrageenan in all samples. Continuous ultrasound-assisted production offers a promising approach for producing SRC with lower energy consumption and shorter processing time.
