Susu merupakan pangan hewani sumber protein, kalsium, vitamin, dan
mineral yang penting bagi pertumbuhan dan kesehatan. Penelitian ini bertujuan
mengidentifikasi persepsi, pengetahuan, perilaku konsumsi, dan minat siswa SMA
di Kota Bogor terhadap susu sapi dan produk olahannya. Responden terdiri atas 100
siswa SMA usia 15–18 tahun yang dipilih secara purposive sampling. Data
diperoleh melalui kuesioner Google Form dan wawancara langsung, lalu dianalisis
secara deskriptif dan inferensial menggunakan uji Rank Spearman dan Chi-Square.
Hasil penelitian menunjukkan bahwa hubungan antara pengetahuan, persepsi,
minat, dan perilaku konsumsi tidak muncul pada seluruh indikator. Pengetahuan
berhubungan positif lemah dengan frekuensi konsumsi susu sapi, sedangkan
beberapa aspek persepsi dan minat berhubungan dengan frekuensi konsumsi produk
olahan susu. Perilaku konsumsi siswa berkaitan dengan pengetahuan, penilaian
produk, ketertarikan, selera, harga, kemasan, dan kemudahan akses. Milk is an animal-based food source of protein, calcium, vitamins, and
minerals that are important for growth and health. This study aimed to identify the
perceptions, knowledge, consumption behavior, and interest of high school students
in Bogor City toward cow’s milk and its processed products. The respondents
consisted of 100 high school students aged 15 to 18 years selected through
purposive sampling. Data were collected through online questionnaires using
Google Forms and direct interviews, then analyzed descriptively and inferentially
using Spearman Rank and Chi-Square tests. The results showed that the
relationships among knowledge, perception, interest, and consumption behavior did
not appear in all indicators. Knowledge had a weak positive relationship with the
frequency of cow’s milk consumption, while several aspects of perception and
interest were related to the frequency of processed milk product consumption.
Students’ consumption behavior was related to knowledge, product assessment,
interest, taste preferences, price, packaging, and ease of access.
