dc.description.abstractPencucian karkas ayam menggunakan larutan klorin merupakan salah satu upaya untuk mengendalikan cemaran mikroba, tetapi penggunaannya perlu dilakukan dengan cermat. Penelitian ini bertujuan menganalisis pengaruh pencucian menggunakan larutan klorin pada konsentrasi 0, 2, dan 5 mg L-1 terhadap mutu fisikokimia, mikrobiologis dan residu klorin pada karkas ayam selama penyimpanan dingin. 18 ekor karkas diberi perlakuan pencucian menggunakan larutan klorin denagn konsentrasi berbeda lalu dikemas dan disimpan pada suhu 1 - 2 °C selama 0 dan 5 hari. Konsentrasi klorin berpengaruh nyata terhadap pH dan aktivitas air (aw) (p < 0,05), sedangkan penyimpanan berpengaruh terhadap pH (p < 0,001). Konsentrasi 5 mg L-1 paling efektif menekan peningkatan TPC dan Escherichia coli serta menghasilkan jumlah Staphylococcus aureus terendah. Salmonella sp. tidak terdeteksi setelah lima hari penyimpanan. Pengukuran residu klorin belum dapat merepresentasikan residu aktual akibat dugaan interferensi matriks. Pencucian dengan klorin 5 mg L-1 merupakan perlakuan paling efektif dalam mengendalikan pertumbuhan mikroba selama penyimpanan dingin.
dc.description.abstractChicken carcass washing with chlorine solution is utilized to control microbial contamination, but its application requires careful consideration. This study aimed to analyze the effects of washing with chlorine solutions at concentrations of 0, 2, and 5 mg L-1 on the physicochemical, microbiological quality and chlorine residue of chicken carcasses during refrigerated storage. 18 carcasses were washed with chlorine solutions, packaged and stored at 1 - 2 °C for 0 and 5 days. Chlorine concentration significantly affected pH and water activity (aw) (p < 0,05), while storage significantly affected pH (p < 0,001). 5 mg L-1 concentration was the most effective in suppressing TPC, Escherichia coli and resulted in the lowest Staphylococcus aureus count. Salmonella sp. was not detected after five days of storage. Chlorine residue measurements could not adequately represent the actual residue levels due to matrix interference. Washing with 5 mg L-1 chlorine was the most effective treatment for controlling microbial growth during refrigerated storage.
