Hubungan Lameness Score dengan Karakteristik Fisikokimia Susu Mentah di Peternakan Sapi Perah Rakyat Bogor
Abstract
Karakteristik susu sapi mentah dipengaruhi oleh banyak faktor, salah satunya adalah gangguan locomotor atau lameness. Penelitian ini bertujuan menganalisis hubungan lameness score dengan karakteristik fisikokimia susu mentah di peternakan sapi perah rakyat Bogor. Sebanyak 40 ekor sapi perah laktasi dipilih secara purposive sampling dan diamati menggunakan locomotion scoring skala 1 sampai 5 berdasarkan metode Sprecher. Karakteristik sampel susu dianalisis menggunakan milk analyzer untuk menentukan kadar lemak, protein, solid non-fat (SNF), laktosa, dan density. Data dianalisis secara deskriptif dan menggunakan uji korelasi Rank Spearman. Hasil penelitian menunjukkan karakteristik fisikokimia susu mentah sampel secara umum memenuhi SNI dan berada pada kisaran normal, kecuali parameter kadar lemak. Hasil uji korelasi menunjukkan bahwa lameness score, berhubungan signifikan dengan kadar protein, SNF, dan laktosa (lemah) serta density (sedang), tetapi tidak dengan kadar lemak. Simpulan, lameness score berhubungan signifikan dengan kadar protein, SNF, laktosa, dan density susu mentah, dengan kekuatan hubungan tertinggi pada parameter density. Raw milk characteristics are influenced by many factors, one of which is locomotor disorder or lameness. This study aimed to analyze the correlation between lameness score and physicochemical characteristics of raw milk at smallholder dairy farms in Bogor. A total of 40 lactating dairy cows were selected using purposive sampling and observed using locomotion scoring on a scale of 1 to 5 based on the Sprecher method. Milk sample characteristics were analyzed using a milk analyzer to determine fat content, protein, solid non-fat (SNF), lactose, and density. Data were analyzed descriptively and using the Spearman Rank correlation test. The results showed that the physicochemical characteristics of raw milk samples generally met the Indonesian National Standard (SNI) and were within normal ranges, except for the fat content parameter. Correlation analysis showed that lameness score was significantly correlated with protein, SNF, and lactose content (weak) as well as density (moderate), but not with fat content. In conclusion, lameness score was significantly correlated with protein content, SNF, lactose, and density of raw milk, with the strongest correlation found in the density parameter.
