      Abstract
      Putih telur cair merupakan produk olahan telur yang diperoleh melalui teknologi pasteurisasi untuk menginaktivasi mikroba patogen, sehingga memperpanjang masa simpan dan mempertahankan sifat fisikokimianya. Penelitian ini bertujuan menganalisis pengaruh suhu pasteurisasi terhadap karakteristik fisikokimia, mikrobiologis, dan organoleptik putih telur cair. Penelitian ini menggunakan rancangan acak kelompok (RAK) satu faktor dengan tiga perlakuan, yaitu tanpa pasteurisasi (P0), pasteurisasi pada suhu 54 °C selama 10 menit (P1), dan pasteurisasi pada suhu 56 °C selama 10 menit (P2). Hasil penelitian menunjukkan bahwa nilai pH putih telur cair P1 (8,45) dan P2 (8,66) tidak nyata dibandingkan dengan P0 (8,30). Aktivitas air (aw) pada P2 (0,85) lebih tinggi dibandingkan P0–P1 (0,77–0,81) dan berbeda nyata dengan P0 (0,77). Daya dan stabilitas buih tertinggi diperoleh pada P0 520,00% dan 92,93% lebih tinggi dibandingkan P1–P2. Total mikroba yang tumbuh pada P2 (2,50 log CFU mL-1) secara nyata lebih rendah dibandingkan P0 (3,27 log CFU mL-1) dan P1 (3,10 log CFU mL-1). Perbedaan suhu pasteurisasi efektif meningkatkan keamanan mikrobiologis putih telur cair, dengan tetap mempertahankan sifat fisikokimia dan organoleptik pada tingkat yang masih dapat diterima.
       
      Liquid egg white is a processed egg product obtained through pasteurization technology to inactivate pathogenic microbes, thus extending shelf life while maintaining its physicochemical properties. This study aimed to analyze the effects of pasteurization temperatures on the physicochemical, microbiological, and organoleptic characteristics of pasteurized egg white. The experiment was arranged in a one-factor randomized block design with three treatments: without pasteurization (P0), pasteurization at 54 °C for 10 minutes (P1), and pasteurization at 56 °C for 10 minutes (P2). The pH values of liquid egg white in P1 (8,45) and P2 (8,66) were not significantly higher than P0 (8,30). Water activity (aw) in P2 (0,85) was higher than in P0–P1 (0,77–0,81) and significantly different from P0 (0,77). The foam capacity and stability in P0 520,00% and 92,93% was higher than in P1–P2. The total microbial count in P2 (2,50 log CFU mL-1 showed significantly (p < 0,05) lower than in P0 (3,27 log CFU mL-1) and P1 (3,10 log CFU mL-1). Pasteurization temperature effectively improved the microbiological safety of liquid egg white while with acceptable reductions in its physicochemical and organoleptic properties.
