      Analisis Kesenjangan Penerapan ISO 22000:2018 pada Produksi Inflight Meal di PT XYZ

      Abstract
      PT. XYZ merupakan salah satu inflight catering di Indonesia yang telah menerapkan sistem manajemen keamanan pangan ISO 22000:2018 sejak tahun 2022. Penelitian ini bertujuan untuk mengetahui kesesuaian penerapan ISO 22000:2018 di PT. XYZ. Pengumpulan data menggunakan wawancara, observasi, dokumentasi, peninjauan dokumen, dan studi literatur. Pengolahan data menggunakan diagram fishbone, 5 why analysis, dan 5W+1H. Terdapat 22 sub klausul ISO/TS 22002-2:2013 dan 30 sub klausul ISO 22000:2018 yang dianalisis dan masing-masing memperoleh rata-rata pemenuhan persyaratan sebesar 87,6% dan 93,9%. Hasil analisis menunjukkan bahwa perusahaan masih memerlukan perbaikan pada penerapan persyaratan ISO/TS 22002-2:2013 maupun ISO 22000:2018. Analisis ketidaksesuaian dilakukan pada aspek dengan nilai pemenuhan persyaratan terendah yaitu aspek pembersihan dan desinfeksi serta sistem ketertelusuran sehingga diperoleh rekomendasi tindakan perbaikan untuk penerapan sistem manajemen keamanan pangan di PT. XYZ.
       
      PT. XYZ is one of the highlight catering companies in Indonesia that has implemented the food safety management system ISO 22000:2018 since 2022. This study aims to find out the suitability of the implementation of ISO 22000:2018 at PT. XYZ. Data collection using interviews, observations, documentation, documentation review, and literature studies. Data processing uses fishbone diagrams, 5 why analysis, and 5W+1H. There are 22 ISO/TS subclauses 22002- 2:2013 and 30 ISO 22000:2018 subclauses analyzed and averaged 87,6% and 93,9%, respectively. Analysis results show that the company still needs improvements to the application of the requirements of ISO/TS 22002-2:2013 or ISO 22000:2018. The nonconformity analysis was conducted on the aspect with the lowest requirement fulfillment value, namely the cleaning and disinfection aspect and the traceability system, so corrective action recommendations were obtained for the implementation of the food safety management system at PT. XYZ.
