      Desain Perbaikan Proses Pencucian Polong Vanili dengan Teknologi Ozon sebagai Upaya Peningkatan Mutu Produk di Kana Vanilla

      Abstract
      Kontaminasi kapang pada produk vanilla bean merupakan permasalahan utama yang dihadapi oleh UMKM Kana Vanilla. Penelitian ini bertujuan untuk mendesain perbaikan proses pencucian polong vanili guna meningkatkan kualitas dan daya saing di pasar ekspor. Metode penelitian menggunakan pendekatan desain keteknikan yang melibatkan pengujian efektivitas pada metode existing dan serangkaian iterasi perlakuan ozon (15, 30, dan 40 menit) terhadap polong vanili dan kultur kapang murni. Parameter utama yang diukur adalah persentase penurunan Angka Kapang Khamir (AKK). Hasil penelitian menunjukkan bahwa metode pencucian existing menggunakan eco-enzyme justru meningkatkan AKK secara signifikan hingga 171%. Sebaliknya, penerapan teknologi ozon pada pencucian menunjukkan efektivitas yang tinggi, dengan durasi paparan optimal selama 40 menit mampu mereduksi AKK pada kultur kapang hingga 95,1%. Solusi ini tidak hanya memenuhi kriteria keberhasilan teknis, tetapi juga diterima oleh mitra. Dengan demikian, perbaikan proses pencucian menggunakan teknologi ozon selama 40 menit menjadi solusi terpilih yang efektif dan layak untuk meningkatkan keamanan serta kualitas produk vanili di Kana Vanilla.
       
      Contamination by mold in vanilla bean products is a major issue faced by the small and medium enterprise (SME) Kana Vanilla. This study aims to design improvements to the vanilla pod washing process in order to enhance product quality and competitiveness in the export market. The research employed an engineering design approach, involving effectiveness testing of the existing method and a series of ozone treatment iterations (15, 30, and 40 minutes) on both vanilla pods and pure mold cultures. The main parameter measured was the percentage reduction in Yeast and Mold Count (YMC). The results showed that the existing washing method using eco-enzyme actually led to a significant increase in YMC, up to 171%. In contrast, the application of ozone technology in the washing process demonstrated high effectiveness, with an optimal exposure duration of 40 minutes reducing YMC in mold cultures by up to 95.1%. This solution not only met the criteria for technical success but was also well-received by the partner. Therefore, improving the washing process using ozone technology with a 40-minute exposure was selected as the most effective and feasible solution to enhance the safety and quality of vanilla products at Kana Vanilla.
