Research on grill and ramen businesses that sell processed livestock products aims evaluate the implementation level of good manufacturing practices (GMP) and sanitation standard operating procedures (SSOP) in Grill and Ramen businesses located in Kemayoran District, Central Jakarta. The method employed was direct observation of operational activities from November 2024 to January 2025. The results show that the implementation level of GMP and SSOP falls into the "moderately compliant" category, with deviation severity scores of 80 out of 432 points for GMP and 46 out of 104 points for SSOP. These findings indicate that most hygiene and sanitation aspects have been implemented, although deficiencies remain in equipment supervision, ventilation systems, and hygiene facilities for employees. Factors influencing the effectiveness of implementation include facility availability, personnel hygiene awareness, and the lack of optimal documentation of operational procedures. Improvements are required through periodic training, preparation of written SOPs, and reinforcement of monitoring systems to ensure continuous enhancement of food safety practices.
