      Karakteristik Fisik dan Kimia Susu Sapi Segar di Koperasi Peternakan Sapi Perah pada Ketinggian yang Berbeda

      Abstract
      Jumlah produksi susu sapi di Indonesia masih belum dapat memenuhi kebutuhan konsumsi susu sapi nasional. Selain itu kualitas susu yang diproduksi oleh peternak di dalam negeri masih cukup banyak yang belum mencapai SNI susu sapi segar. Penelitian ini bertujuan untuk menganalisis kualitas susu yang diproduksi di dua koperasi peternakan sapi perah yang berasal dari ketinggian tempat yang berbeda. Peneltian ini menggunakan 6 sampel susu segar dari KUNAK KPS Kabupaten Bogor dan Koperasi Kurnia Rahayu Kabupaten Bandung. Kualitas susu sapi segar diuji dengan menghitung kadar berat jenis, pH, total padatan, bahan kering tanpa lemak (BKTL), lemak, protein, dan laktosa menggunakan lactoscan yang kemudian dianalisis menggunakan T-test dengan perlakuan perbedaan ketinggian lokasi koperasi yaitu dataran rendah dan dataran tinggi. Secara keseluruhan kualitas fisikokimia susu sapi segar pada 2 (dua) koperasi masih belum sepenuhnya memenuhi standar SNI tentang syarat mutu susu segar, terdapat beberapa parameter uji yang masih berada di bawah standar SNI. Parameter uji yang masih berada di bawah SNI di Koperasi Kurnia Rahayu adalah berat jenis dengan nilai 1,026±0,003 g mL-1. Sementara pada KUNAK Koperasi Produksi Susu Bogor adalah nilai berat jenis, protein, dan bahan kering tanpa lemak dengan masing-masing kadar kualitas tersebut adalah 1,0244±0,26 g mL-1, 2,7±0,02%, dan 7,7±0,06%. Harga susu yang dijual ditentukan oleh koperasi dan peternak berdasarkan pada berat jenis susu, lemak susu, dan total padatan susu.
       
      The amount of cow's milk production in Indonesia is still unable to meet the needs of national cow's milk consumption. The quality of milk produced by farmers in the country is still quite a lot that has not reached the SNI of fresh cow's milk. This study aims to analyze the quality of milk produced in two dairy farming cooperatives from different altitudes. This study used 6 fresh milk samples from KUNAK KPS Bogor Regency and Kurnia Rahayu Cooperative Bandung Regency. The quality of fresh cow's milk was tested by calculating the levels of specific gravity, pH, total solids, dry matter without fat (BKTL), fat, protein, and lactose using lactoscan which was then analyzed using a T-test with the altitude difference of the cooperative locations treatment, which are lowlands and highlands. Overall, the physicochemical quality of fresh cow's milk in 2 (two) cooperatives still does not fully meet SNI standards regarding the quality requirements of fresh milk, there are several test parameters that are still below SNI standards. The test parameter that is still below SNI in Kurnia Rahayu Cooperative is the specific gravity with a value of 1,026±0,03 g mL-1. While at the Kunak Bogor Milk Production Cooperative, the values of specific gravity, protein, and dry matter without fat with each quality level are 1,0244±0,26 g mL-1, 2,7±0,02%, and 7,7±0,06%. The price of milk sold is determined by cooperatives and farmers based on milk specific gravity, milk fat and total milk solids.
