      Karakteristik Karkas dan Non Karkas Sapi Bali Jantan pada Skor Kondisi Tubuh yang Berbeda

      Abstract
      Sapi bali merupakan sapi potong asli Indonesia yang unggul dalam adaptasi lingkungan dan efisiensi produksi daging. Penelitian ini bertujuan menganalisis karakteristik karkas dan non karkas sapi bali jantan dengan tingkat skor kondisi tubuh (BCS = body condition score) yang berbeda. Sebanyak 23 ekor sapi bali jantan digunakan dan penelitian ini terdiri atas enam ekor BCS 3 dan 17 ekor BCS 4. Peubah yang diamati adalah bobot dan persentase bobot potong, karkas, daging, tulang, jeroan merah, jeroan hijau, kepala, kaki, dan kulit. Data dianalisis menggunakan uji T dengan prosedur general linear model. Hasil menunjukkan bahwa sapi dengan BCS 4 memiliki bobot potong, bobot karkas, bobot dan persentase daging, bobot dan persentase jeroan merah dan hijau yang secara signifikan lebih tinggi (P<0,05) dibanding BCS 3. Rataan hasil tersebut secara berturut-turut adalah 305,18±21,93 kg, 144,46±10,29 kg, 105,75±8,27 kg, 73,18±1,47%, 11,07±1,55 kg, 3,64±0,52%, 18,83±1,68 kg, dan 6,2±0,66%. Namun, tidak terdapat perbedaan pada persentase karkas, bobot tulang, bobot dan persentase kulit dan kepala sapi bali jantan. BCS lebih tinggi menunjukkan produktivitas karkas yang lebih baik.
       
      Bali cattle are native Indonesian beef cattle that excel in environmental adaptation and meat production efficiency. This study aims to analyze the carcass and non-carcass characteristics of bull bali cattle with different levels of body condition score (BCS). A total of 23 bull bali cattle were used and this study consisted of six BCS 3 and 17 BCS 4. The variables observed were weight and percentage of slaughter weight carcass, meat, bone, red offal, green offal, head, feet, and skin. Data were analyzed using the T test with the general linear model procedure. The results showed that cattle with BCS 4 had significantly higher slaughter weight, carcass weight, weight and percentage of meat and, weight and percentage of red and green offal. The average result were 305,18±21,93 kg, 144,46±10,29 kg, 105,75±8,27 kg, 73,18±1,47%, 11,07±1,55 kg, 3,64±0,52%, 18,83±1,68 kg, and 6,2±0,66%. However, there was no difference in carcass percentage, bone weight, weight and percentage of skin and head of bull bali cattle. Higher BCS indicates better carcass productivity.
