dc.description.abstractTujuan dari penelitian ini yaitu menentukan umur simpan produk susu kental manis dan menganalisis kecepatan reaksi dari produk susu kental manis dengan pendekatan Arrhenius. Penelitian dilakukan dengan menguji parameter yang terdiri dari viskositas, pH, dan warna. Pengujian viskositas menggunakan viskometer Brookefield. Pengujian pH menggunakan pH meter Schoot Handylab. Pengujian warna menggunakan Hunterlab Colorflex EZ. Hasil dari penelitian menunjukan bahwa umur simpan berdasarkan viskositas yaitu 630,0 hari (ordo nol) dan 467,5 hari (ordo satu). Berdasarkan pH yaitu 385,7 hari (ordo nol) dan 370,4 hari (ordo satu). Berdasarkan nilai L* yaitu 456,3 hari (ordo nol) dan 510,2 hari (ordo satu). Berdasarkan browning index yaitu 218,6 hari (ordo nol) dan 60,3 hari (ordo satu). Selain itu, kecepatan reaksi yang terjadi ketika disimpan pada suhu 40 ? berdasarkan viskositas 32x lebih cepat rusak, berdasarkan pH 4x lebih cepat rusak, beradasarkan nilai L* 6x lebih cepat rusak, dan berdasarkan browning index 4x lebih cepat rusak.
dc.description.abstractThis research purposes are determining the shelf life of sweetened condensed milk and analyzing the reaction rate of sweetened condensed milk with Arrhenius approach. The research is done by measuring the product along with the parameters are viscosity, pH, L* value, and browning index. Viscosity measurement is done using Brookefiled viscometer. pH measurement is done using Schoot Handylab pH meter. Color measurement is done using Hunterlab Colorflex EZ. The research results shown the shelf life according to viscosity are 630,0 days (0th order) and 467,5 days (1st order). According to pH are 385,7 days (0th order) and 370,4 days (1st order). According to L* value are 456,3 days (0th order) and 510,2 days (1st order). According to browning index are 218,6 days (0th order) and 60,3 days (1st order). Furthermore, the reaction rate of the product when stored in 40 ? according to viscosity is spoiled 32x faster, according to pH is spoiled 4x faster, according to L* value is spoiled 6x faster, and according to browning index is spoiled 4x faster.
