dc.description.abstractDurian monthong merupakan buah musiman yang memiliki karakteristik dagingnya yang tebal, berwarna kuning terang, sangat manis, tekstur nya halus dan aromanya tajam. Salah satu penghasil durian monthong terbesar di Indonesia adalah Kota Palu, Sulawesi Tengah. Rantai pasok suatu perusahaan harus optimal karena memiliki peran penting dalam kesuksesan suatu perusahaan yang ditandai dengan beberapa karakteristik utama seperti responsif terhadap permintaan, biaya rendah, kolaborasi yang baik antar aktor rantai pasok, dan manajemen risiko yang efektif. Analisis ini dilakukan untuk mengetahui risiko yang terjadi atau memungkinkan terjadi sehingga perusahaan dapat melakukan aksi mitigasi dalam rangka mengurangi risiko tersebut. Penelitian ini dilakukan dengan menganalisis kondisi situasional rantai pasok menggunakan pendekatan Food Supply Chain Management (FSCM), mengidentifikasi kejadian risiko dan sumber risiko serta menentukan aksi mitigasinya menggunakan metode House of Risk (HOR) pada tiga titik yaitu supplier, packing house, dan distributor. Dari analisis tersebut didapatkan pada titik supplier, packing house, dan distributor memiliki sebanyak 7, 8, 7 prioritas sumber risiko dan 8, 8, 9 prioritas mitigasi risiko. Dengan teridentifikasinya prioritas sumber risiko diharapkan mampu membantu perusahaan sebagai salah satu alat penunjang keputusan untuk melakukan mitigasi risiko sesuai yang disarankan.
dc.description.abstractMonthong durian is a seasonal fruit that is characterized by thick flesh, bright yellow color, very sweet, smooth texture and strong aroma. One of the largest producers of Monthong durian in Indonesia is Palu City, Central Sulawesi The supply chain of a company must be optimized, as it plays a crucial role in the success of a business, marked by several key characteristics such as responsiveness to demand, low costs, good collaboration among supply chain actors, and effective risk management. This analysis aims to identify current or potential risks so that companies can take mitigation actions to reduce these risks. This research was carried out by analyzing the situational conditions of the supply chain using the Food Supply Chain Management (FSCM) approach, identifying risk events and sources of risk and determining mitigation actions using the House of Risk (HOR) method at three points, namely suppliers, packing houses and distributors. The analysis results indicate that at the supplier, packing house, and distributor, there are 7, 8, and 7 priority risk sources and 8, 8, and 9 priority risk mitigations. By identifying priority sources of risk, it is anticipated that this will assist companies by serving as a decision support tool for implementing recommended risk mitigation strategies.
