dc.description.abstractStandarisasi proses produksi merupakan proses merumuskan, menetapkan dan menerapkan standar proses. Tujuan dari penelitian ini adalah merancang upaya peningkatan mutu produk tuna kaleng UPI Mina Bahari 45 dan menjamin konsistensi mutu produk melalui penerapan standar proses produksi. Jaminan mutu produk dilakukan melalui pengawasan mutu bahan baku, proses produksi dan produk akhir. Standar proses produksi dirancang dalam upaya menjamin mutu produk mulai dari penerimaan bahan baku hingga produk siap diedarkan. Salah satu hal yang penting diperhatikan dalam merancang standar proses adalah nilai F0. Nilai F0 tuna kaleng yang dipakai dalam standar proses adalah 19,35 menit. Standar proses produksi divalidasi menggunakan pengujian laboratorium produk sesuai dengan standar mutu SNI tuna dalam kemasan kaleng. Hasil uji menunjukkan bahwa tuna kaleng hanya sebesar 53,09%, sehingga belum memenuhi standar. Sedangkan atribut mutu lain telah memenuhi standar. Bobot tuntas produk Ketidaksesuaian bobot tuntas diatasi dengan memperbaiki prosedur pelaksanaan proses pemotongan dan pengisian untuk dapat diterapkan dalam proses produksi.id
dc.description.abstractStandardization of the production process is the process of formulating, setting and implementing standard process. The purpose of this research is to improve the quality of canned tuna products by UPI Mina Bahari 45 and ensure consistency of product quality through the application of standard production processes. Product quality assurance is carried out through quality control of raw materials, production processes, and final products. Production process standards are designed in an effort to ensure product quality, from receiving raw materials to ready-to-die products. One of the important things to consider in designing a standard process is the F0 value. The F0 value of canned tuna used in the standard process is 19.35 minutes. The standard of the production process is validated using laboratory testing of the product in accordance with the SNI quality standard of canned tuna. The test results show that the drained weight of canned tuna product is only 53.09%, so it does not fullfil the standard, while other quality attributes have fullfil the standard. The The weight discrepancy that was overcome by improving the procedure for the cutting and filling process for later application in the production process.id
