dc.description.abstract | Angka Konsumsi Ikan secara nasional mengalami peningkatan yang
signifikan setiap tahunnya. Ikan dalam keadaan hidup memiliki nilai jual dan
kualitas yang lebih baik jika dibandingkan ikan dalam keadaan mati. Proses logistik
untuk membawa ikan hidup dari kawasan produksi ke lokasi konsumen ditentukan
oleh metode dan lama waktu transportasi, sehingga perlu dilakukan teknik
transportasi dan persiapan yang tepat untuk mempertahankan nilai survival rate
ikan pasca transportasi. Penelitian ini bertujuan mengevaluasi pengaruh lama waktu
pembekuan dan debit aliran air saat pembugaran terhadap survival rate ikan bawal
yang dipingsankan dengan minyak cengkih dan dicelupkan dalam larutan gliserol.
Metode penelitian menggunakan minyak cengkih 250 ppm, gliserol 5% sebagai zat
anti beku, kejut suhu beku -13℃ dengan variasi waktu 60, 90, dan 120 menit,
perendaman dengan debit aliran air dingin dengan variasi waktu 30, 60, 90, 120,
dan 150 menit, kemudian dibugarkan. Hasil waktu kejut suhu terbaik 90 menit dan
perendaman debit aliran air dingin 90 menit diberi perlakuan debit yaitu 0 ; 0.5 ;
dan 1.11 liter/detik. Hasil penelitian terbaik menunjukkan bahwa lama waktu kejut
suhu beku -13 ℃ serta perendaman dengan debit aliran 0,5 liter/detik selama 90
menit memiliki nilai survival rate ikan sebesar 77,78%. | id |
dc.description.abstract | The national fish consumption rate has increased significantly every year.
Live fish have a better selling value and quality when compared to dead fish. The
logistics process for bringing live fish from the production area to the consumer
location is determined by the method and duration of transportation, so it is
necessary to carry out appropriate transportation and preparation techniques to
maintain the survival rate of fish after transportation. The aim of this study was to
evaluate the effect of freezing time and water flow rate during recovery on the
survival rate of pomfret that were stunned with clove oil and immersed in glycerol
solution. This method research uses 250 ppm clove oil, 5% glycerol as an antifreeze,
freezing shock -13℃ with time variations of 60, 90, and 120 minutes, immersion
with cold water flow discharge with time variations of 30, 60, 90, 120 , and 150
minutes, then refreshed. The results of the best freezing time of 90 minutes and
immersion of 90 minutes of cold water flow were treated with discharges of 0 ; 0.5 ;
and 1.11 liters/second. The best results showed that the freezing temperature shock
time of -13 and immersion with a flow rate of 0.5 liters/second for 90 minutes had
a fish survival rate of 77,78%. | id |
