      Pengaruh Penyimpanan Dingin Menggunakan Controlled Atmosphere Storage (CAS) Terhadap Mutu Buah Nanas

      Abstract
      Buah nanas merupakan salah satu buah unggulan di Indonesia. Indonesia merupakan salah satu produsen nanas segar terbesar di Asia Tenggara. Besarnya produksi buah nanas di Indonesia tidak seimbang dengan volume ekspor yang masih tergolong rendah. Buah nanas di Indonesia sebagian besar di ekspor dalam bentuk olahan dikarenakan umur simpan buah nanas yang tergolong pendek.Salah satu cara untuk memperpanjang umur simpan buah nanas adalah dengan penyimpanan menggunakan suhu dingin yang dikombinasikan dengan pengaturan komposisi udara. Penyimpanan jenis ini biasa disebut controlled atmosphere storage (CAS). Tujuan penelitian ini adalah menganalisis pengaruh metode penyimpanan CAS terhadap mutu buah nanas segar selama penyimpanan dingin. Buah nanas akan disimpan dengan 3 jenis penyimpanan, yaitu penyimpanan menggunakan suhu lingkungan (T 29°C), penyimpanan menggunakan suhu dingin (T 10°C), dan penyimpanan menggunakan metode CAS (T 10°C, O2 5-7%, CO2 < 5%, RH 85-90%). Buah nanas disimpan menggunakan 4 jenis lama penyimpanan, yaitu 7 hari, 14 hari, 21 hari, dan 28 hari. Mutu yang diukur adalah susut bobot, kekerasan, total padatan terlarut, total asam tertitrasi, dan warna daging buah. Rancangan percobaan yang digunakan adalah rancangan acak kelompok 2 faktorial. Hasil dari penelitian menunjukkan susut bobot terkecil terdapat pada jenis penyimpanan CAS yaitu 2,24%. Tingkat kekerasan tertinggi juga terdapat pada metode CAS sebesar 28,12 N. Metode penyimpanan CAS tidak berpengaruh terhadap nilai total padatan terlarut dan total asam tertitrasi. Nilai warna L, a, dan b cenderung dipengaruhi oleh lama penyimpanan. Semakin lama waktu penyimpanan akan menunjukkan tingkat warna kematangan buah nanas. Berdasarkan nilai susut bobot dan kekerasan, penyimpanan menggunakan CAS adalah jenis penyimpanan terbaik
       
      Pineapple is one of the leading fruits in Indonesia. Indonesia is one of the largest fresh pineapple producers in Southeast Asia. The amount of pineapple production in Indonesia is not balanced with the export volume which is still relatively low. Pineapple fruit in Indonesia is mostly exported in processed form due to the short shelf life of pineapple. One way to extend the shelf life of pineapple is to store it using cold temperatures combined with air composition settings. This type of storage is known as controlled atmosphere storage (CAS). The purpose of this study was to analyze the effect of the CAS storage method on the quality of fresh pineapple during cold storage. Pineapple fruit will be stored in 3 types of storage, namely storage using ambient temperature (T 29°C), storage using cold temperature (T 10°C), and storage using the CAS method (T 10°C, O2 5-7%, CO2 < 5%, RH 85-90%). Pineapple fruit is stored using 4 types of storage duration, namely 7 days, 14 days, 21 days, and 28 days. Quality measured was weight loss, hardness, total dissolved solids, total acid titrated, and flesh color. The experimental design used was a 2-factorial randomized block design. The results of the study showed that the smallest weight loss was found in the CAS storage type, which was 2.24%. The highest hardness level was also found in the CAS method of 28.12 N. The CAS storage method had no effect on the value of total dissolved solids and total titrated acid. The color values of L, a, and b tend to be influenced by storage time. The longer the storage time will indicate the color level of the ripeness of the pineapple. Based on the value of weight loss and hardness, storage using CAS is the best type of storage.
