      Pengaruh Gliserol terhadap Survival Rate dan Kualitas Ikan Mas (Cyprinus carpio) yang Mengalami Kejutan Suhu Beku

      Abstract
      Tingginya permintaan ikan mas hidup mendorong pentingnya penanganan ikan yang baik hingga sampai ke tangan konsumen. Penanganan dengan imotilisasi dan kejut suhu beku diketahui efektif untuk penanganan transportasi ikan hidup. Namun, kejut suhu beku berdampak pada kelangsungan hidup ikan mas karena terjadinya pembekuan darah. Gliserol diketahui memiliki kemampuan untuk mencegah kristalisasi es pada titil beku larutan, sehingga ikan mampu bertahan pada suhu dingin. Penelitian ini bertujuan menentukan pengaruh konsentrasi gliserol dan lama perendamannya terhadap survival rate serta kenampakan visual insang dan mata pada ikan mas (Cyprinus carpio) yang mengalami kejut suhu beku. Konsentrasi larutan gliserol yang digunakan adalah 1, 3, 5% (v/v), sedangkan lama perendamannya adalah selama 5, 15, dan 30 menit. Konsentrasi larutan gliserol terbaik yang diperoleh adalah sebesar 5% (v/v) dengan lama perendaman terbaik adalah selama 5 menit yang memperoleh waktu menjelang pingsan setelah 2,76 ± 0,27 menit dan waktu menjelang bugar setelah 12,62 ± 7,94 menit. Survival rate ikan mas yang diperoleh, yaitu 100% dengan lama kejut suhu beku selama120 menit.
       
      The high demand for live carp urges the good fish handling until the fish reaches consumers. The immotilization and frozen shocking are effective for handling live fish transportation. However, the frozen shocking affects the survival rate of fish due to blood freezing. Glycerol is known to be able to prevents ice crystallization at freezing point, thus the fish has more afford to survival at cold temperature. This study aimed to determine the effects of (Cyprinus carpio) and the visual appearance of gills and eyes after being frozen. The concentrations of glycerol solution used were 1, 3, and 5% (v/v), while the immersion times were for 5, 15, and 30 minutes. The best concentration of glycerol solution obtained was 5% (v/v), with the best immersion tie for 5 minutes, which obtained the time before fainting was 2.76 ± 0,27 minutes, and the time to fully recovered was 12.62 ± 7.94 minutes. The survival rate of carp obtained was 100%, with a freezing temperature shock of 120 minutes.
