      Abstract
      Proses produksi mie jagung berbahan baku tepung jagung 100%. dilakukan melalui tahap pengukusan, pencampuran bahan, penggilingan adonan (dengan grinder), pembentukan lembaran, pembentukan untaian mie, pemotongan mie dan pengukusan mie. Invensi ini menghasilkan mie dengan karakteristik reologi (elongasi, kekenyalan, kekerasan) dan cooking loss yang menyerupai mie terigu
