dc.description.abstractADNAN. Minimally Processed Lanzone Under Modified Atmosphere Packaging (MAP) Storage. Under the direction of HADI K. PURWADARIA and USMAN AHMAD Minimally processed lanzone is an alternative to serve fresh lanzone. The research objective was to determine appropriate modified atmosphere packaging condition that can extend the shelf life of minimally processed lanzone. The results indicated that appropriate atmosphere composition for storing minimally processed lanzone were 9-11% O2 and 4-6% CO2 at 15 0C. Minimally processed lanzone was suggested to be prepared in the form of half peeled in lattitude direction, kept in a stretch film packaging and stored at 15 0C. In this MAP, the minimally processed lanzone was able to maintain its quality in two day storage.id
