Carcharinus sp. were potential to become a main export commodity because almost the parts of its body can be utilized, from the skin to the liver producing an oil with a high nutritional content. Commonly Carcharinus sp. contain an omega-3 unsaturated fatty acid, namely EPA and DHA. The object of this study were to determine the amount of liver oil from Carcharinus sp., nutrition content (moisture, ash, fat, protein, and carbohydrates), and to characteristics the fatty acids of fish liver oil extracted by soxhlet method. The liver of Carcharinus sp was dominated by fat which was equal to 47,02%. Amount of yield Carcharinus sp liver oils was 31,38±1,75%. SAFA was dominated by palmitic acid amounted to 10,25%. Inaddition, MUFA was dominated by elaidate and palmitoleic acid with the percentage of each area was 10,52% and 6,13%. PUFA was dominated by cis-,7,10,13,16,19 DHA with the percentage of each area was 11,01%. The value of free fatty acid (FFA) was 20,51±5,61%. Acid value was 40,77±5,61%. The peroxide value was 80,00±5,77meq/kg.
