This research was conducted to observe the influence of extracts Eurycoma longifolia Jack (ELJ) on the fat profile of lamb carcasses. This experiment used factorial design, the first factor was the dosages of ELJ extract (0, 50 and 100mg/kg body weight) the second factor was the breed of sheep (fat tail sheep/DEG and thin tail sheep/DET). The observed variables were serum testosterone, average daily gain, feed consumtion, feed convertion, slaughter weight, hot carcasses weight, weight of pelvic heart kidney fat, percentage of carcasses fat, marbling fat, muscle cholesterol and fatty acid composition. The data were analyzed by analysis of covariance. Initial weigth live as covariable. The results showed that ELJ extract did not have significant effects on serum testosterone, daily gain, feed consumtion, feed convertion, slaughter weight and the fat profile of lamb carcasses. There was significant interaction between level of ELJ extract and breeds of sheep on hot carcass weight and percentage. The weight and percentage of hot carcasses, percentege of carcass fat were significantly higher (P<0.05) in DEG than in DET. These resulted in significantly (P<0.05) lower miristic, palmitic, stearic, linoleic and linolenic DEG fatty acids.
