Sorghum has the potential to support food diversification as a local food ingredient, including through its use in cookies as an alternative snack. This study examines the influence of health consciousness, price perception, and taste on the purchase intention of sorghum-based cookies using the Theory of Planned Behavior. Data were collected from 310 respondents, comprising students from the Faculty of Economics and Management, the Faculty of Human Ecology, and the Department of Nutrition at IPB University, as well as members of a healthy food community. Data were analyzed descriptively and quantitatively using PLS-SEM. The results indicate that price perception, taste, attitude, and subjective norms significantly influence purchase intention, whereas health consciousness and perceived behavioral control do not. These findings highlight the roles of product evaluation and social influence in shaping purchase intention. Practically, businesses can encourage purchase intention through appropriate pricing, taste improvement, and effective promotion
