      Karakterisasi Beberapa Bahan Pelapis dan Sifat Fisik Permen Karet Kunyah Hasil Hard Panning

      Abstract
      Permen karet kunyah berpelapis diproduksi melalui proses panning menggunakan bahan pelapis seperti sukrosa, dekstrosa, dan gula alkohol. Produk hasil hard panning dicirikan oleh tekstur renyah dan memerlukan gaya yang relatif tinggi untuk mematahkan lapisan pelapisnya. Penelitian ini bertujuan untuk mengevaluasi karakter beberapa jenis bahan pelapis, mengevaluasi proses panning permen karet kunyah berpelapis, serta mengevaluasi karakter permen karet kunyah berpelapis yang dihasilkan. Bahan yang diteliti meliputi sukrosa, dekstrosa monohidrat, maltitol, dan sorbitol. Viskositas setiap larutan pelapis diukur pada berbagai konsentrasi dan selanjutnya diaplikasikan dalam proses panning. Produk yang dihasilkan dianalisis berdasarkan parameter kekerasan, kadar air, dan warna. Pada konsentrasi larutan yang sama, larutan sukrosa menunjukkan viskositas tertinggi, diikuti dekstrosa monohidrat dan maltitol, sedangkan sorbitol menunjukkan viskositas terendah. Jenis bahan pelapis berpengaruh nyata terhadap karakteristik fisik produk akhir. Pelapis sukrosa menunjukkan kadar air terendah (1,04%), yang mengindikasikan tingkat kekeringan lapisan dan potensi stabilitas penyimpanan yang lebih baik. Permen karet kunyah berpelapis sorbitol menunjukkan tingkat kekerasan tertinggi (36,56 N), yang mengindikasikan pembentukan lapisan luar yang lebih keras dan berkaitan dengan tekstur permen karet kunyah berpelapis yang diinginkan, yaitu lapisan luar yang keras dan bagian inti yang lunak. Permen karet kunyah berpelapis maltitol menunjukkan tingkat kecerahan tertinggi (L* = 88,94) dan nilai kekuningan terendah (b* = 5,18), sehingga berpotensi diaplikasikan pada produk konfeksionari bebas gula yang memerlukan penampakan putih cerah.
       
      Coated chewing gum is produced through a panning process using coating agents such as sucrose, dextrose, and sugar alcohols. Hard-panned products are characterized by a crunchy texture and a relatively high force required to fracture the coating layer. This study aimed to evaluate the character of several coating materials, assess the panning process of coated chewing gum, and evaluate the characteristics of the resulting coated chewing gum products. Sucrose, dextrose monohydrate, maltitol, and sorbitol were investigated. The viscosity of each coating solution was measured at various concentrations and subsequently applied in the panning process. The coated products were analyzed for hardness, moisture content, and color. At the same solution concentration, the sucrose solution exhibited the highest viscosity, followed by dextrose monohydrate and maltitol, while sorbitol exhibited the lowest viscosity. The coating material significantly influenced the physical character of the final product. Sucrose coating exhibited the lowest moisture content (1.04%), indicating better coating dryness and storage stability for confectionery products requiring a low-moisture surface. Sorbitol-coated chewing gum showed the highest hardness (36.56 N), suggesting the formation of a firmer outer layer associated with the desirable hard-shell and soft-center texture of coated chewing gum. Maltitol-coated chewing gum exhibited the highest lightness (L* = 88.94) and the lowest yellowness (b* = 5.18), indicating its suitability for sugar-free confectionery products requiring a bright white appearance
