dc.description.abstractPenelitian ini bertujuan untuk mengembangkan produk modifikasi berupa pemanfaatan hati ayam dan bayam dalam pembuatan ravioli sebagai alternatif hidangan Pencegah anemia pada remaja putri. Hati ayam dipilih karena kandungan zat besi heme yang tinggi dan mudah diserap tubuh, sedangkan bayam sebagai sumber zat besi non-heme dan vitamin. Penelitian menggunakan Rancangan Acak Lengkap (RAL) dengan tiga formulasi F1 50 gr hati ayam + 15 gr bayam, F2 40 gr hati ayam + 30 gr bayam, F3 30 gr hati ayam + 45 gr bayam. Uji organoleptik dilakukan terhadap 35 panelis menggunakan skala hedonik 1–5 untuk menilai rasa, aroma, tekstur, dan warna. Hasil penelitian menunjukkan bahwa formulasi F1 dengan penambahan hati ayam 50 gr dan bayam 15 gr memberikan penerimaan terbaik dari segi organoleptik serta meningkatkan kandungan zat besi dan protein sesuai kebutuhan gizi remaja putri. Analisis biaya menggunakan metode full costing dengan menghitung kebutuhan bahan,biaya overhead dan biaya tenaga kerja menunjukkan produk ravioli ini layak diproduksi dengan harga jual terjangkau. Dengan demikian, ravioli penambahan hati ayam dan isi bayam dapat menjadi alternatif pangan fungsional yang bergizi, menarik, dan berpotensi mencegah anemia pada remaja.
dc.description.abstractThis study aims to develop a modified product by using chicken liver and spinach in making ravioli as an alternative dish to help prevent anemia in teenage girls. Chicken liver is chosen because it has a high heme iron content that is easily absorbed by the body, while spinach serves as a source of non-heme iron and vitamins. The study uses a Completely Randomized Design (CRD). with three formulations: F1 50 g chicken liver + 15 g spinach, F2 40 g chicken liver + 30 g spinach, F3 30 g chicken liver + 45 g spinach. Organoleptic tests were carried out with 35 panelists using a 1–5 hedonic scale to assess taste, aroma, texture, and color. The study results showed that formulation F1, with 50 g chicken liver and 15 g spinach, received the best acceptance in terms of organoleptic properties and also increased iron and protein content according to the nutritional needs of teenage girls. Cost analysis using the full costing method, which calculates material requirements, overhead costs, and labor costs, showed that this ravioli product is feasible to produce at an affordable selling price.
