People's lifestyles have begun to experience significant changes along with technological developments. Online platforms offer various types of fast food (junk food) that are high in saturated fat, sugar, and salt. These conditions increase the accumulation of free radicals in the body and affect the pathogenesis of hypertension, thus requiring preventive strategies through healthy dietary patterns.
Previous studies have proven that fermented milk products can increase antioxidant activity through the formation of bioactive peptides and the transformation of phenolic compounds. Synbiotic yogurt is a processed milk product fermented with Lactobacillus bulgaricus, Streptococcus thermophilus, and Lactiplantibacillus plantarum subsp. plantarum strain IIA-1A5 cultures, along with the addition of FOS and pectin prebiotics to support more optimal fermentation activity.
Goat milk synbiotic yogurt has the potential to serve as a functional food because it contains complete nutrients and bioactive components that provide positive health impacts beyond its basic nutritional content. This study aimed to analyze the effect of different bacterial cultures and storage durations on the physicochemical, microbiological, proximate, and organoleptic parameters, as well as the antioxidant and antihypertensive activities of synbiotic yogurt products with the addition of FOS and pectin prebiotics.
The experimental design used in this study was a Completely Randomized Design (CRD) with a 3x3 factorial pattern and three replications. The first factor was the bacterial culture treatment used in the yogurt fermentation, and the second factor was the yogurt storage duration.
The differences in bacterial cultures and storage durations significantly affected the microbiological parameters, physicochemical characteristics, and proximate parameters, and obtained preferred scores in most of the organoleptic test attributes. Meanwhile, the functional properties of the synbiotic yogurt in terms of antioxidant activity showed significantly different results among the yogurt samples in the raw fraction, whereas the antihypertensive activity showed significantly different results among the yogurt samples in the 10-50 kDa fraction. L. plantarum subsp. plantarum strain IIA-1A5 was effective in exhibiting antihypertensive activity, as evidenced by the higher ACE inhibitory activity in the yogurt fermented with the L. plantarum subsp. plantarum strain IIA-1A5 culture.
